Blueberry Baked Oats without Banana

Skip the muffin tin and make this Blueberry Baked Oats without Banana recipe. It's just like a muffin but in a bowl! This recipe is a delicious, nutritious and filling way to start the day.

Ingredients
 

  • 1/2 cup rolled oats
  • 1 serving vegan vanilla protein powder, optional
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup almond milk, unsweetened
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup blueberries, fresh or frozen

Instructions
 

  • Preheat the oven to 400 degrees F
  • In a large mixing bowl, add in the rolled oats, protein powder, baking powder and cinnamon
  • Mix until fully combined
  • Add in the almond milk, maple syrup and vanilla extract. Mix again until fully combined
  • Fold in your blueberries
  • Transfer to an oven-safe bowl or dish and bake for 23-25 minutes
  • Once fully baked, you should be able to stick a toothpick in and come out clean
  • Let cool slightly (~5 minutes) and add your desired toppings! Some of my favorite toppings are nut butters, extra blueberries, a honey drizzle and extra cinnamon!
