Pumpkin Pie Baked Oatmeal

healthy pumpkin oatmeal bars

healthy pumpkin oatmeal bars are a delicious breakfast to start your day. not only is it made with clean and nutritious ingredients but it is also vegan and gluten free friendly!

Ingredients
 

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp pumpkin pie spice
  • 1 can pumpkin puree
  • 1/3 cup pure maple syrup
  • 1/2 cup almond milk
  • 2 eggs, or flax eggs
  • 1 tbsp coconut oil, melted
  • 1 tsp vanilla extract

Instructions
 

  • preheat your oven to 350 degrees F
  •  while that's heating, get a bowl and add all your dry ingredients
  • mix thoroughly then add the wet ingredients one at a time until fully combined with the dry
  •  once combined, pour into a greased baking dish. i like to use my cheesecake pan
  • bake for 40-45 minutes until fully cooked and a little caramelization has started to form on the end.
  • remove from the oven and let cool before slicing
  •  for toppings, add your favorite berries, pumpkin seeds, nut butter, granola or some more maple syrup to top it off!
