Honey Cookies are the perfect dessert to make when you want a sweet treat without refined sugar. An easy and tasty recipe that can also be a fun cookie decorating activity.
- 1 1/3 cup gluten free flour
- 1/2 tsp cornstarch
- 1 tsp baking powder
- 1/4 tsp salt
- 3 tbsp salted butter
- 1/3 cup honey
- 3 tsp vanilla extract
- 1 egg
Preheat oven to 350 degrees F
Line a baking sheet with parchment paper
Melt the salted butter and leave separate to cool slightly
Combine all of the wet ingredients in a bowl
Add the dry ingredients to the wet and mix until fully combined. Make sure to not over mix the dough
Form the dough into a flat disk, cover in plastic wrap and place in the fridge for at least 1 hour. This allows the butter to get cold so that the honey sugar cookies are fluffy + soft
Remove from fridge and let cool for about five minutes. This allows the dough to soften just enough so that as you roll it out, cracks don't form
Roll the dough out until it is about 1/4 inch thick and then use cookie cutters to make your cookies!
Repeat until all the dough is used up
Place the honey sugar cookies on the lined baking sheet with 1 inch between each cookie
Next, bake for 5-7 minutes or until the bottoms of the honey sugar cookies are slightly golden and the center is fully baked
Let the honey sugar cookies cool completely before decorating or enjoy plain!
