Peach Cobbler Muffins

Peach Cobbler Muffins are a tasty treat when it's peach season! Using simple ingredients, these muffins are easy to make, satisfying and delicious!

Ingredients
 

  • 1/4 cup butter, softened
  • 2 tbsp honey
  • 2 tbsp granulated sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • 1/3 cup almond milk
  • 1 cup gluten free flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1 cup fresh peach, small chunks

Instructions
 

  • Preheat the oven to 400 degrees F
  • In a large mixing bowl add the butter, honey, sugar, vanilla extract and egg
  • Once combined, fold in the dry ingredients
  • Mix again until fully combined
  • Line a muffin tin with muffin wrappers. Place each one in every other muffin mold
  • Fill each muffin wrapper with about 1/3 cup of batter
  • Bake in the oven for 15 minutes
  • The muffins will be done when a toothpick comes out clean
  • Let cool and then enjoy!
