nectarine crisp topped with crumble, greek yogurt and honey

healthy red nectarine crisp (single serving)

this red nectarine crisp is perfect in the summer when you want something indulgent and refreshing. using simple ingredients, this crisp is lower in calories and healthier than a typical crisp.

Ingredients
 

  • 1 nectarines
  • 1 tbsp coconut oil, melted
  • 2 tbsp monk fruit sweetener, golden
  • 1/4 cup rolled oats
  • 2 tbsp gluten free flour
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions
 

  • preheat the oven to 400 degrees F
  • prep the nectarine by cutting it in half and removing the pit
  • mix that coconut oil, sugar, oats, flour, cinnamon and vanilla extract together in a bowl
  • when fully combined, place on top of the nectarine (inner side facing up). spread the mixture in an even layer so that it's covering both halves fully
  • bake in the oven for 20-23 minutes
  • remove from the oven when nectarine has softened, the crumble mixture has cooked and slightly golden
  • let cool slightly, about 5-10 minutes
  • top with greek yogurt, ice cream, honey, or anything your heart desires!
