Blondies with Peanut Butter and Marshmallow Fluff

These Blondies with Peanut Butter and Marshmallow Fluff are a childhood dream. The peanut butter and marshmallow combination is delicious! They are easy to make with simple ingredients.

Ingredients
 

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup salted butter, melted
  • 1/4 cup almond milk
  • 1 egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 1/2 cup creamy salted peanut butter, divided
  • 1 cup all purpose flour, or all purpose gluten free flour
  • 1/2 cup mini marshmallows
  • 1/2 cup peanut butter chips, for topping
  • 1/4 cup marshmallow fluff, for topping

Instructions
 

  • Preheat the oven to 350 degrees F
  • Add the eggs, brown sugar, butter, milk, creamy peanut butter and vanilla extract to a large mixing bowl
  • Mix until fully combined
  • Add flour and mix until just combined
  • Fold in the mini marshmallows
  • Line a 8x8 baking dish with parchment paper or grease with non-stick spray
  • Transfer the batter into the pan and spread in an even layer
  • Swirl in 2 tbsp of creamy peanut butter and marshmallow fluff
  • Top with the peanut butter chips
  • Bake in the oven for 28-30 minutes, until the batter is fully baked (a toothpick should come out of the center clean!)
  • Let cool completely before slicing
  • Slice and enjoy!
