Oatmeal Raisin Chocolate Chip Cookies

These Oatmeal Raisin Chocolate Chip Cookies are perfectly soft and chewy. Filled with a delicious cinnamon flavor, it pairs perfectly with both the raisins and chocolate chips.

Ingredients
 

  • 1/2 cup butter, melted
  • 1/3 cup dark brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1 1/2 cups rolled oats
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 cup raisins
  • 1/2 cup semi-sweet chocolate chips
  • flaky sea salt , for topping

Instructions
 

  • Preheat the oven to 350 degrees F
  • In a large mixing bowl, combine the butter, sugars, egg and vanilla extract
  • Mix until combined
  • Fold in the flour, baking soda and cinnamon
  • Once combined, add the rolled oats
  • Gently mix in the raisins and chocolate chips, until evenly distributed
  • Using a 2 inch scooper, portion out the dough on a baking sheet lined with parchment paper
  • Leave about 2 inches in between each cookie, you will have to do multiple trays
  • Bake for 12-14 minutes until the edges and bottom are golden. The middle should still be soft
  • Remove from the oven and immediately top with flaky sea salt
  • Let cool for 10 minutes on the baking sheet then transfer to a cooling rack
  • Enjoy!
