These Oatmeal Raisin Chocolate Chip Cookies are perfectly soft and chewy. Filled with a delicious cinnamon flavor, it pairs perfectly with both the raisins and chocolate chips.
- 1/2 cup butter, melted
- 1/3 cup dark brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup all purpose flour
- 1 1/2 cups rolled oats
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 cup raisins
- 1/2 cup semi-sweet chocolate chips
- flaky sea salt , for topping
Preheat the oven to 350 degrees F
In a large mixing bowl, combine the butter, sugars, egg and vanilla extract
Mix until combined
Fold in the flour, baking soda and cinnamon
Once combined, add the rolled oats
Gently mix in the raisins and chocolate chips, until evenly distributed
Using a 2 inch scooper, portion out the dough on a baking sheet lined with parchment paper
Leave about 2 inches in between each cookie, you will have to do multiple trays
Bake for 12-14 minutes until the edges and bottom are golden. The middle should still be soft
Remove from the oven and immediately top with flaky sea salt
Let cool for 10 minutes on the baking sheet then transfer to a cooling rack
