These Chocolate Frozen Cheesecake Bites are creamy, indulgent and delicious. They are made with a cream cheese, greek yogurt and cocoa powder base that is frozen before coating it in melted chocolate. Once it hardens, it becomes the perfect bite of sweetness with a slight tart flavor.
- 2 oz Plain Cream Cheese
- 1/4 cup Plain Greek Yogurt, 0%, 2% or 5% will work
- 2 tbsp Honey, or Maple Syrup
- 2 tbsp Unsweetened Cocoa Powder
- 1/3 cup Semi-Sweet Chocolate Chips, or Dark/Milk Chocolate Chips
- 1 tbsp Coconut Oil
Add the cream cheese, yogurt, cocoa powder and honey to a bowl
Use an electric hand mixer to combine until smooth and creamy
Put the bowl in the fridge to chill for about 2 hours
Scoop with a 1 tbsp ice cream/cookie dough scooper to portion out the balls on a baking sheet lined with parchment paper
Put back in the fridge to chill for 15 minutes
Melt the chocolate chips and coconut oil together in a bowl (mine took about 30 seconds)
Mix until you have a smooth chocolate coating
Dip each cheesecake bite in the chocolate and place back on parchment paper
Repeat until all are coated
Put back in the fridge to chill and solidify the chocolate coating for 15-20 minutes
