Dark Chocolate Covered Pretzels Stuffed with Peanut Butter Recipe

This recipe for Dark Chocolate Covered Pretzels Stuffed with Peanut Butter is the ideal salty and sweet combination. The pretzels are stuffed with a peanut butter mixture that is made with creamy peanut butter and vanilla protein powder.
The combination of each component has a delicious flavor that comes together flawlessly. The peanut butter filling pairs perfectly with the salty pretzels and sweet, dark chocolate coating. It's an easy-to-make recipe that will satisfy your sweet tooth!

Ingredients
 

  • 70 mini pretzels, gluten free if needed
  • 1 cup creamy natural peanut butter
  • 1-2 servings vanilla protein powder, about 1/2 to 2/3 cups in total
  • 3/4 cup dark chocolate chips, melted
  • 1 tsp coconut oil, melted
  • flaky sea salt, optional

Instructions
 

  • Spread the pretzels out flat on a baking tray that is lined with parchment paper
  • In a bowl, mix together the peanut butter and protein powder. It should become a thick texture that you can mold easily with your hands
  • If the mixture is dry, add 1 tbsp of water. This can happen depending on the peanut butter or protein powder used. Slowly add in water until you get the consistency of where you can roll it into a ball!
  • Scoop about 1/2 tbsp of the mixture and roll into a ball
  • Place the ball on a pretzel on the tray
  • Grab another pretzel and press it on top of the peanut butter mixture until it flattens
  • Repeat until you've used up all of the peanut butter dough
  • Melt the dark chocolate chips with the coconut oil. Melt in the microwave in 30 second increments and mix until smooth
  • Dip each stuffed pretzel halfway into the melted chocolate
  • Place back onto the parchment paper and repeat for the remaining pretzels
  • Top each pretzel with flaky sea salt if desired (I highly recommend it!)
  • Chill in the fridge for 45 minutes to 1 hour on the tray
  • Enjoy!
