High Protein Mini Egg Bites are an easy, healthy and high-protein breakfast that you can make on the weekend and have throughout the week. They're only 50 calories each!

Ingredients
 

  • 4 eggs
  • 3/4 cup liquid egg whites
  • 1/2 cup red pepper, diced
  • 1/2 cup kale, shredded finely
  • 1/2 cup goat cheese, crumbled
  • salt, to taste
  • pepper, to taste

Instructions
 

  • Preheat the oven to 350 degrees F
  • Grab a large mixing bowl and crack your 4 eggs into the bowl
  • Whisk until blended and then add in the liquid egg whites
  • Add the diced red pepper, shredded kale and crumbled goat cheese to the bowl
  • Mix until fully combined and add salt and pepper to taste
  • Grease your muffin pan with nonstick spray of your choice
  • Add 1/4 cup of the egg bite mixture into each muffin tin, the recipe should make 10-12 muffins which is enough to have 2 for each day of the work week.
  • Bake for 15 minutes
  • Let cool slightly and enjoy!
