Egg Bite Customizations

You can substitute the goat cheese for feta cheese or any other cheese you have on hand. Cheddar, parmesan and even mozzarella would work!

I like to sneak in some greens to these egg bites. My favorite to use is kale but you can use anything such as spinach or broccoli.

Bell pepper adds a nice sweetness and variety of nutrients but can be omitted.

One of the best parts about this recipe is that you can add or take away any ingredients to please your taste buds!

How to Make High Protein Mini Egg Bites

  1. Preheat the oven to 350 degrees F
  2. Grab a large mixing bowl and crack your 4 eggs into the bowl
  3. Whisk until blended and then add in the liquid egg whites
  4. Add the diced red pepper, shredded kale and crumbled goat cheese to the bowl
  5. Mix until fully combined and add salt and pepper to taste
  6. Grease your muffin pan with nonstick spray of your choice
  7. Add 1/4 cup of the egg bite mixture into each muffin tin, the recipe should make 10-12 muffins which is enough to have 2 for each day of the work week.
  8. Bake for 15 minutes
  9. Let cool slightly and enjoy!

Yes, you can do that! However, it will change the flavor because the richness is added from the egg yolk.

However, if you do want to do this, for each whole egg you will instead use 1/4 cup of liquid egg whites. If you don’t have liquid egg whites, 8 eggs using only the whites will replace the 4 whole eggs.

What if I add milk to this recipe?

You can definitely add milk to this recipe but it is not needed! Since these eggs are baked, they come out fluffy and full of moisture. Not to mention, the goat cheese adds an amazing creaminess to each bite.
