These Low Calorie Brownies have about 60 calories in each. They are the perfect indulgent treat that is better-for-you too. Each bite is filled with a rich, chocolate flavor and pools of melted chocolate from the chunks. The texture of the brownie is still fudgy but lighter than your typical brownie.
- 1/2 cup pumpkin puree
- 1 egg
- 1/3 cup maple syrup
- 1 tbsp vanilla extract
- 1/2 cup almond flour
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup dark chocolate baking chips, use your heart to measure :)
- flaky sea salt, optional topping
Preheat the oven to 350 degrees F and line an 8x8 pan with parchment paper
Add the pumpkin puree, maple syrup, egg and vanilla extract to a large mixing bowl
Once fully combined, add in the almond flour, unsweetened cacao powder, baking soda and baking powder. Mix until combined
Fold in the chocolate chips
Line an 8x8 square pan with parchment paper
Pour the brownie batter into the pan and spread in an even layer
Top with additional chocolate chips
Bake in the oven for 30 minutes, rotating the pan 180 degrees halfway through
Remove from the oven and immediately add flaky sea salt
Let cool, slice and enjoy!
