Low Calorie Brownies Recipe with Pumpkin Puree

Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Yield: 12 brownies
These Low Calorie Brownies have about 60 calories in each. They are the perfect indulgent treat that is better-for-you too. Each bite is filled with a rich, chocolate flavor and pools of melted chocolate from the chunks. The texture of the brownie is still fudgy but lighter than your typical brownie.

Ingredients

  • 1/2 cup pumpkin puree
  • 1 egg
  • 1/3 cup maple syrup
  • 1 tbsp vanilla extract
  • 1/2 cup almond flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup dark chocolate baking chips, use your heart to measure :)
  • flaky sea salt, optional topping

Instructions

  • Preheat the oven to 350 degrees F and line an 8x8 pan with parchment paper
  • Add the pumpkin puree, maple syrup, egg and vanilla extract to a large mixing bowl
  • Once fully combined, add in the almond flour, unsweetened cacao powder, baking soda and baking powder. Mix until combined
  • Fold in the chocolate chips
  • Line an 8x8 square pan with parchment paper
  • Pour the brownie batter into the pan and spread in an even layer
  • Top with additional chocolate chips
  • Bake in the oven for 30 minutes, rotating the pan 180 degrees halfway through
  • Remove from the oven and immediately add flaky sea salt
  • Let cool, slice and enjoy!
