These Carrot Cake Oats are the healthiest way to have carrot cake for breakfast. Made with clean and nutritious ingredients, this single-serving oatmeal will keep you fueled and focused.

Ingredients
 

  • 1/4 cup rolled oats
  • 1/2 cup shredded carrots
  • 3/4 cup water
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 cup golden raisins
  • 2 tbsp shredded coconut
  • 1 tbsp pumpkin seeds
  • 1 tbsp honey, for drizzling on top

Instructions
 

  • Add the rolled oats, shredded carrots and water to a small saucepan over high heat
  • Bring the water to boil then lower to simmer
  • Add in the vanilla extract, cinnamon and nutmeg
  • Stir consistently until the mixture thickens
  • Once the mixture is fully cooked, remove from heat and add the raisins
  • Transfer the oatmeal to a serving bowl and top with the shredded coconut, pumpkin seeds and honey drizzle
  • Grab a spoon and enjoy!
