This Chocolate Baked Oatmeal with Dates is the perfect recipe when you are on the go or have a busy week. It's easy to make, highly nutritious and incredibly delicious!
- 1 banana, mashed
- 1/4 cup peanut butter
- 1 tbsp coconut oil, melted
- 1/4 cup date syrup
- 1 cup almond milk
- 2 cups rolled oats
- 1 tsp baking powder
- 1/3 cup dates, chopped
- 1/3 cup semi-sweet chocolate chips
Preheat the oven to 350 degrees F
Gather all of your ingredients together and measure them out
For the peanut butter, you want it to be smooth to be able to mix it in easily. If needed, heat the peanut butter in a microwave-safe dish for 10 second intervals
In a large mixing bowl, add the mashed banana, peanut butter, date syrup and coconut oil
Pour in the rolled oats and baking powder
Add in the almond milk and mix until fully combined
Fold in the chopped dates and chocolate chips
Line an 8x8 baking tray with parchment paper
Pour the oatmeal mixture into the tray and spread into an even layer
Top with extra chocolate chips and dates if desired
Bake for 30 minutes until the oatmeal is fully baked through
Remove from the oven and let cool before slicing
