Chocolate Baked Oatmeal with Dates

This Chocolate Baked Oatmeal with Dates is the perfect recipe when you are on the go or have a busy week. It's easy to make, highly nutritious and incredibly delicious!

Ingredients
 

  • 1 banana, mashed
  • 1/4 cup peanut butter
  • 1 tbsp coconut oil, melted
  • 1/4 cup date syrup
  • 1 cup almond milk
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1/3 cup dates, chopped
  • 1/3 cup semi-sweet chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees F
  • Gather all of your ingredients together and measure them out
  • For the peanut butter, you want it to be smooth to be able to mix it in easily. If needed, heat the peanut butter in a microwave-safe dish for 10 second intervals
  • In a large mixing bowl, add the mashed banana, peanut butter, date syrup and coconut oil
  • Pour in the rolled oats and baking powder
  • Add in the almond milk and mix until fully combined
  • Fold in the chopped dates and chocolate chips
  • Line an 8x8 baking tray with parchment paper
  • Pour the oatmeal mixture into the tray and spread into an even layer
  • Top with extra chocolate chips and dates if desired
  • Bake for 30 minutes until the oatmeal is fully baked through
  • Remove from the oven and let cool before slicing
  • Enjoy!
