Sliced Chocolate Baked Oatmeal with Chocolate Chips and Dates

I am a sweets girl, through and through. I love dessert and I especially love starting my day with something sweet.

However, I also know how important it is to start my day with nutritious ingredients that will fuel my body.

That’s how I came up with this Chocolate Baked Oatmeal featuring dates and peanut butter. It satisfies my sweet tooth while also giving my body the energy it needs.

How to Make Chocolate Baked Oatmeal with Dates

  1. Preheat the oven to 350 degrees F
  2. Gather all of your ingredients together and measure them out
  3. For the peanut butter, you want it to be smooth to be able to mix it in easily. If needed, heat the peanut butter in a microwave-safe dish for 10 second intervals
  4. In a large mixing bowl, add the mashed banana, peanut butter, date syrup and coconut oil
  5. Pour in the rolled oats and baking powder
  6. Add in the almond milk and mix until fully combined
  7. Fold in the chopped dates and chocolate chips
  8. Line an 8×8 baking tray with parchment paper
  9. Pour the oatmeal mixture into the tray and spread into an even layer
  10. Top with extra chocolate chips and dates if desired
  11. Bake for 30 minutes until the oatmeal is fully baked through
  12. Remove from the oven and let cool before slicing
  13. Enjoy!

What are the best swaps for date syrup?

The best swap to use would be maple syrup! However, honey will work as well.

Can I use steel cut oats?

No, this would create a different result and the oatmeal bars won’t bake through as well.

What other mix-ins can I add?

You can add pretty much any flavor or mix-in to this recipe. If you use a frozen fruit, it may affect the consistency. I recommend using fresh fruit.

You can also add in nuts, other nut butters and anything else you desire.

Can I double the batch?

You could double the recipe and add it to a 9×13 inch pan or two 8×8 pans. If you use a different sized pan, it will affect the baking time and take longer.

How do I store the leftover oatmeal bars?

Store in an airtight container in the fridge for up to 5 days. You can also freeze the bars for up to 2 months in a freezer safe container.
