However, I also know how important it is to start my day with nutritious ingredients that will fuel my body.
That’s how I came up with this Chocolate Baked Oatmeal featuring dates and peanut butter. It satisfies my sweet tooth while also giving my body the energy it needs.
Main Ingredients
- Rolled Oats
- Baking Powder
- Peanut Butter
- Coconut Oil
- Almond Milk
- Vanilla Extract
- Date Syrup (or Maple Syrup)
- Chopped Dates
- Chocolate Chips
How to Make Chocolate Baked Oatmeal with Dates
- Preheat the oven to 350 degrees F
- Gather all of your ingredients together and measure them out
- For the peanut butter, you want it to be smooth to be able to mix it in easily. If needed, heat the peanut butter in a microwave-safe dish for 10 second intervals
- In a large mixing bowl, add the mashed banana, peanut butter, date syrup and coconut oil
- Pour in the rolled oats and baking powder
- Add in the almond milk and mix until fully combined
- Fold in the chopped dates and chocolate chips
- Line an 8×8 baking tray with parchment paper
- Pour the oatmeal mixture into the tray and spread into an even layer
- Top with extra chocolate chips and dates if desired
- Bake for 30 minutes until the oatmeal is fully baked through
- Remove from the oven and let cool before slicing
- Enjoy!

No, this would create a different result and the oatmeal bars won’t bake through as well.
You can add pretty much any flavor or mix-in to this recipe. If you use a frozen fruit, it may affect the consistency. I recommend using fresh fruit.
You can also add in nuts, other nut butters and anything else you desire.
You could double the recipe and add it to a 9×13 inch pan or two 8×8 pans. If you use a different sized pan, it will affect the baking time and take longer.
