If you have a major sweet tooth like me, these little bites are the perfect treat.

They are easy to make and good for you too! The chocolate shell makes these peanut butter stuffed raspberries indulgent and satisfying.

The peanut butter filling makes this a high protein treat by using a peanut butter powder. However, you can use regular peanut butter for the filling as well!

My favorite part about this recipe is the flavor combination. It reminds me of a peanut butter and jelly filling but covered in chocolate.

TIP: Adding a little flaky sea salt on top also perfectly contrasts the sweetness of each bite.

Different Types of Peanut Butter Filling

To make the peanut butter filling in this recipe, I used a peanut butter powder.

I mixed the peanut butter powder with water to make the perfect consistency for a peanut butter filling. However, this peanut butter powder is also higher in protein than your typical peanut butter.

You can also use regular peanut butter to make this recipe. Just make sure it is firm enough to stay in the raspberries on its own.

Leaving a jar of peanut butter in the fridge will help to thicken the peanut butter if it is too loose.

How to Make Dark Chocolate Covered Raspberries Stuffed with Peanut Butter

  1. Clean the raspberries and let them dry completely 
  2. In a small bowl, combine the peanut butter powder and water
  3. Melt the semi-sweet and dark chocolate chips together in a bowl with coconut oil for 30 second increments (stirring in between each round)
  4. Line a baking sheet or flat plate with parchment paper
  5. Once the raspberries are fully dried, pipe the peanut butter mixture into the middle of the raspberry until it is filled to the top
  6. Dip the peanut butter stuffed raspberry into the bowl of melted chocolate
  7. Turn until covered and remove using a fork to drain the extra chocolate 
  8. Place on the parchment paper
  9. Repeat until all raspberries are filled with peanut butter and coated with chocolate
  10. Top each raspberry with flaky sea salt
  11. Put in the fridge to set (about 30-45 minutes)
  12. Remove from the fridge 
  13. Enjoy!

Yes! However, you don’t want the peanut butter to be too liquid so that it stays within the raspberry on its own.

If you leave your peanut butter in the fridge or use a type like Skippy, then it should be a good thickness to fill the raspberries.

To make this substitute, swap out the peanut butter and water for about 1/3 cup of creamy peanut butter.

Will milk chocolate work for this recipe?

Yes! You can use any chocolate that you would like. It just has to be able to melt easily and be able to cover the fruit.

How do I know the chocolate shell is fully set?

You should be able to lift the chocolate covered raspberries off the parchment paper without leaving any chocolate behind. It usually takes about 30-45 minutes for the chocolate to harden.

Can I make these recipe with any type of fruit?

I would suggest making this recipe with strawberries if you prefer!

You can wash then scoop out the center of the strawberries to fill them with the peanut butter. However, since strawberries are bigger, you may need more chocolate and peanut butter filling.

Store in an airtight container in the fridge for up to 5 days or in the freezer for 1 month.

  • About 24 Fresh Raspberries
  • 1/2 cup Peanut Butter Powder
  • 1/4 cup Water
  • 1/4 cup Dark Chocolate Chips
  • 1/4 cup Semi-Sweet Chocolate Chips
  • 1 tsp Coconut Oil

Instructions
 

  • Clean the raspberries and let them dry completely
  • In a small bowl, combine the peanut butter powder and water
  • Melt the semi-sweet and dark chocolate chips together in a bowl with coconut oil for 30 second increments (stirring in between each round)
