This Chocolate Bark Recipe with sliced almonds and cherries is both refreshing and indulgent. The chocolate pairs perfectly with the salty almonds and complements the sweet cherries.
I also add some flake sea salt on top because nothing goes better with chocolate than a little salt!

Different Ways to Melt Chocolate
The two most common and accessible methods of melting chocolate are in the microwave or on the stovetop.
I prefer to use the microwave as it is super easy and takes little time. When using the microwave, start with 30 second increments (about 2) until the chocolate is pretty much melted.
After this use, 10 second increments until fully melted and mixed with the coconut oil. The chocolate should be smooth, silky and have a nice shine to it.
The other method of melting chocolate is on the stovetop. Unless you are doubling this recipe, I recommend using the microwave.
If you prefer using the stovetop, start by boiling a small pot of water. Once boiling reduce to a simmer.
Add a larger metal bowl on top of the pot so that it fits securely. Add the chocolate and coconut oil into the metal bowl. Stir continuously until fully melted.
How to Make Chocolate Almond Bark with Cherries
- If needed, pit and half your sweet dark cherries
- In a microwave-safe bowl, melt the chocolate and coconut oil at 30 second increments until melted, mix in between each session
- Line a small baking tray with parchment paper
- Pour the chocolate onto the parchment paper and spread out into a thin, even layer
- Add the cherry halves and almond slivered on top so that they are evenly distributed over the chocolate
- Add flakey sea salt on top (optional)
- Put in the freezer for 1 hour
- Remove from the freezer
- Break the chocolate bark into pieces and enjoy!
Substitutions and Other Toppings
Whether you don’t have some of the specific ingredients that I use or your prefer other ingredients, you can definitely make some swaps!
- Chocolate: Swap the dark chocolate I used in this recipe for ANY chocolate. As long as you can melt it, you can use it. If you prefer a milk, semi-sweet or white chocolate…any will work!
- Nuts: You can swap out the almonds but any nut or seed. Use a seed like pumpkin or sunflower seeds if there is a nut allergy.
- Fruit: While the cherries pair perfectly with the chocolate and almonds, you can also swap out the cherries for any other fruit. I recommend: raspberries, blackberries, fresh orange or strawberries.

Yes! You can use them exactly how I use the fresh cherries by just placing them on the melted chocolate. If you would like to cut them into small pieces before adding, let them soften slightly to cut and then add onto the chocolate.
The chocolate is completely set when there are no parts still melted and you can pick it up in your hands. You should be able to easily peel it off of the parchment paper.
I typically use my hand to break it into to chunks. However, you can use a sharp knife to cut it into pieces as well.
Store in an airtight container in the fridge for up to 7 days. You can also store in a freezer safe container for up to 2 months.
