These Chocolate Covered Raspberries with Peanut Butter are satisfying and delicious. They are made with fresh raspberries, peanut butter and a chocolate shell. The chocolate adds a nice crunch which contrasts the peanut butter filling and fresh raspberries.
- About 24 Fresh Raspberries
- 1/2 cup Peanut Butter Powder, or regular peanut butter
- 1/4 cup Water
- 1/2 cup Dark Chocolate Chips
- 1 tsp Coconut Oil
Line a baking sheet or flat plate with parchment paper. Set aside for later
Clean the raspberries and dry them completely
In a small bowl, combine the peanut butter powder and water (skip if using regular peanut butter)
Once the raspberries are fully dried, pipe the peanut butter mixture into the middle of the raspberry until it is filled to the top
Melt the chocolate chips together in a bowl with coconut oil for 30 second increments (stirring in between each round)
Dip the peanut butter stuffed raspberry into the bowl of melted chocolate
Turn until covered and remove using a fork to drain the extra chocolate
Place the chocolate coated raspberry on the parchment paper
Top with sea salt flakes
Repeat until all raspberries are filled and coated
Put in the fridge to set (about 30-45 minutes) or in the freezer for 10-15 minutes
