These Chocolate Covered Raspberries Stuffed with Peanut Butter are indulgent yet healthy. They are made with fresh raspberries, peanut butter and a crunchy chocolate shell. A great option for dessert when you are focusing on eating healthier and more whole foods.
- About 24 Fresh Raspberries
- 1/2 cup Peanut Butter Powder
- 1/4 cup Water
- 1/4 cup Dark Chocolate Chips
- 1/4 cup Semi-Sweet Chocolate Chips
- 1 tsp Coconut Oil
Clean the raspberries and let them dry completely
In a small bowl, combine the peanut butter powder and water
Melt the semi-sweet and dark chocolate chips together in a bowl with coconut oil for 30 second increments (stirring in between each round)
Line a baking sheet or flat plate with parchment paper
Once the raspberries are fully dried, pipe the peanut butter mixture into the middle of the raspberry until it is filled to the top
Dip the peanut butter stuffed raspberry into the bowl of melted chocolate
Turn until covered and remove using a fork to drain the extra chocolate
Place on the parchment paper
Repeat until all raspberries are filled with peanut butter and coated with chocolate
Top each raspberry with flaky sea salt
Put in the fridge to set (about 30-45 minutes)
Remove from the fridge
