First, let’s talk measurements.

For every one cup of granulated sugar you would use only 2/3 cup of honey.

In this recipe I used both granulated sugar and honey. I like the crumb that granulated sugar creates when baking a cake.

However, the addition of the honey adds moistness and a delicious flavor to the cake.

  • 1 large egg, room temperature
  • 1/4 cup whole milk ricotta cheese, room temperature
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • fresh blackberries, for topping

  • 1/2 cup powdered sugar
