This Berry Cake that is sweetened with honey is not only incredibly delicious but easy to make too. It's light and refreshing, perfect for a gathering or party in the warmer months.
- 6 tbsp salted butter, softened
- 3 tbsp honey
- 1/3 cup granulated sugar
- 1 large egg, room temperature
- 1/4 cup whole milk ricotta cheese, room temperature
- 1 tsp vanilla extract
- 1 cup all purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- fresh blackberries, for topping
- fresh raspberries, for topping
Honey Glaze
- 1/2 cup powdered sugar
- 3 tbsp honey
- 3 tbsp almond milk, or milk of choice
Preheat the oven to 350 degrees F
Start by combining your wet ingredients in a large mixing bowl using a hand mixer
Fold in the dry ingredients until just combined
Pour the batter into a lined 8x8 square pan that is greased or lined with parchment paper
Bake for 20-24 minutes or until a toothpick comes out of the center clean
Let the cake cool and make the Honey Glaze
Once the cake has cooled completely, top with the glaze and fresh berries
