Berry Cake Sweetened with Honey

Yield: 9 slices
This Berry Cake that is sweetened with honey is not only incredibly delicious but easy to make too. It's light and refreshing, perfect for a gathering or party in the warmer months.

Ingredients
 

  • 6 tbsp salted butter, softened
  • 3 tbsp honey
  • 1/3 cup granulated sugar
  • 1 large egg, room temperature
  • 1/4 cup whole milk ricotta cheese, room temperature
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • fresh blackberries, for topping
  • fresh raspberries, for topping

Honey Glaze

  • 1/2 cup powdered sugar
  • 3 tbsp honey
  • 3 tbsp almond milk, or milk of choice

Instructions
 

  • Preheat the oven to 350 degrees F
  • Start by combining your wet ingredients in a large mixing bowl using a hand mixer
  • Fold in the dry ingredients until just combined
  • Pour the batter into a lined 8x8 square pan that is greased or lined with parchment paper
  • Bake for 20-24 minutes or until a toothpick comes out of the center clean
  • Let the cake cool and make the Honey Glaze
  • Once the cake has cooled completely, top with the glaze and fresh berries
  • Slice and enjoy!
