  • Baking Powder and Baking Soda – Baking soda neutralizes the natural acidity of cocoa powder, while baking powder provides extra, heat-activated lift to ensure the cake becomes light and fluffy.
  • Salt – For this recipe, I used a Fine Grain Kosher Salt. Kosher Salt or table salt are most commonly used in baking recipes.
  • Dutch-Processed Cocoa Powder – Any unsweetened cocoa powder will work in this recipe. However, I used dutch-processed cocoa powder because of its rich and dark cocoa flavor.
  • Egg – A large-sized egg is used in this recipe and should be at room temperature before adding it into the batter.
  • Oil – Any baking oil works for this recipe. I used a light olive oil. However, avocado oil, canola oil or vegetable oil can be used, swapping at a 1:1 ratio.
  • Sour Cream – Full fat sour cream creates a moist, tender and rich cake. The sour cream should be at room temperature before adding it into the batter.
  • Granulated Sugar – This sugar cuts through the natural bitterness of the cocoa powder and also attracts moisture to keep the cake texture soft.
  • Dark Brown Sugar – Because dark brown sugar contains a high amount of molasses, it locks in water to prevent the cake from drying out.
  • Hot Coffee – Adding hot coffee or espresso to a chocolate cake enhances the deep chocolate flavor and gelatinizes the flour to lock in moisture for a tender and moist cake texture.

Ingredients
 

Chocolate Cake

  • 1 large Egg, room temperature
  • 1/4 cup Olive Oil, or neutral baking oil
  • 1/2 cup Dark Brown Sugar, packed
  • 1/4 cup Granulated Sugar
  • 1/3 cup Sour Cream, room temperature
  • 1/2 tsp Vanilla Extract
  • 1 cup All Purpose Flour
  • 1/3 cup Dutch-Processed Cocoa Powder
  • 1/4 tsp Baking Salt
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 cup Hot Coffee or Espresso

Cookies and Cream Frosting

  • 1 cup Salted Butter, softened
  • 12 Chocolate Sandwich Creme Cookies, crushed to a fine crumb (I used double stuffed creme cookies)
  • 3 cups Powdered Sugar
  • 2 tbsp Heavy Cream, room temperature
  • 1 tsp Vanilla Extract

Instructions
 

  • Preheat the oven to 350 degrees F
  • Line a square 8×8 baking pan with parchment paper and grease with nonstick spray as needed
  • To a large mixing bowl, add the egg, oil, both sugars, sour cream and vanilla extract
  • Whisk until combined. Once combined, add the flour, baking powder, baking soda and cocoa powder
  • Mix until just combined, then pour the hot coffee on top
  • Slowly mix into the batter, then transfer the batter to the prepared pan
  • Bake for 28-32 minutes or until a toothpick comes out of the center clean
  • Remove the cake from the oven when ready and set aside to cool
  • While the cake cools, make the cookies and cream frosting to go on top
  • To a food processor, add the cookies and blend until they are crushed into almost a powder. There shouldn't be any big chunks
  • Add the softened butter and 1/2 of the powdered sugar to the bowl of a stand mixer. You can also use an electric hand mixer and a large bowl to make the frosting.
  • Mix until smooth and creamy. Add the remaining powdered sugar along with the vanilla extract and heavy cream. Blend until fully incorporated.
  • Add in the crushed oreo sandwich cookies and mix slowly until evenly distributed throughout the frosting.
  • Spread on the cooled chocolate cake and garnish with broken pieces of the chocolate creme sandwich cookies
  • Slice and enjoy!
