And this Single Serve Protein Muffin is the PERFECT solution!
It’s easy to make and incredibly delicious. You can use any protein powder you have on hand, however, I have linked the two I use below.
The muffin comes out fluffy and moist with the most perfect little pockets of chocolate from the mini chocolate chips.

- Vanilla Protein Powder or Coffee Protein Powder
- All Purpose Flour
- Vanilla Extract
- Coconut Oil
- Almond Milk
- Granulated Sugar
- Mini Chocolate Chips

The Best Protein Powder to Bake With
My go-to protein powder when baking is to use a vegan protein powder. I have used this plant-based vanilla protein powder and it has a great flavor and texture.
Some protein powders can cause baked goods to have a bad texture or flavor.
However, you can use whey protein as well. I have made this exact recipe with this vanilla flavored coffee protein powder. It comes out delicious!
It gives you an extra boost of energy plus protein to keep your body full and energized.
How to Make this Protein Muffin Recipe (Single Serve)
- Preheat the oven to 375 degrees F
- To a mixing bowl, add the melted coconut oil, almond milk, vanilla extract and granulated sugar
- Mix until combined
- Next, fold in the flour, protein powder and baking powder
- Once combined, add in the chocolate chips
- Add to a muffin liner and bake in the oven for 5 minutes
- Reduce the oven temperature to 350 degrees F and bake for an additional 8-10 minutes or until a toothpick comes out of the center clean
- Let cool slightly and enjoy!
