Protein Muffin Recipe (Single Serve)

This Single Serve Protein Muffin Recipe is the perfect breakfast when you want something sweet. It's easy to make, filled with protein and also delicious!

Ingredients
 

  • 1 tbsp coconut oil, melted
  • 1 tbsp almond milk
  • 1/2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 scoop protein powder, about 1/4 cup
  • 2 tbsp all purpose flour
  • 1/2 tsp baking powder
  • 2 tbsp mini chocolate chips

Instructions
 

  • Preheat the oven to 375 degrees F
  • To a mixing bowl, add the melted coconut oil, almond milk, vanilla extract and granulated sugar
  • Mix until combined
  • Fold in the flour, protein powder and baking powder
  • Once combined, add in the chocolate chips
  • Add to a muffin liner and bake in the oven for 5 minutes
  • Reduce the oven temperature to 350 degrees F and bake for an additional 8-10 minutes or until a toothpick comes out of the center clean
  • Let cool slightly and enjoy!
