Glazed Blueberry Cake Donuts are the perfect sweet breakfast bursting with blueberry flavor. They can be made gluten free while being incredibly delicious and easy to make!
- 2 eggs
- 1/4 cup granulated sugar
- 2 tbsp coconut oil, melted and cooled
- 1 tsp vanilla extract
- 1/2 cup gluten free flour
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 cup fresh blueberries
Vanilla Glaze
- 1/2 cup confectioner's sugar
- 1-2 tbsp of milk , start with 1 tbsp
- 1 tsp vanilla extract
Preheat the oven to 350 degrees F
Combine the eggs, granulated sugar, coconut oil and vanilla into a large mixing bowl
Mix until fully combined then fold in the flours and baking powder
Fold the blueberries into the batter
Transfer the batter to a piping bag or use Ziploc bag if you don't have a piping bag
Spray a donut pan with nonstick (my preferred for baking is coconut oil spray)
Cut the tip of the piping bag and start to fill each donut mold until each is 3/4 of the way filled
Top with extra blueberries if desired
Bake in the oven for 10-12 minutes. The donuts will rise and a good test is using a toothpick. It will come out clean when fully baked
Let cool completeley
While the donuts are cooling, make the glaze!
Combine the confectioners sugar with the milk (1 tbsp) and vanilla extract.
Start with 1 tbsp of milk then add 1 tsp at a time until it reaches your desired consistency. You'll want it on the thicker side so that it doesn't absorb into the donuts
Once the donuts are fully cooled, pour the glaze over the donuts while on a cooling rack. Add a piece of wax paper under the donuts to catch any excess glaze (easy clean up!)
Let the glaze set for about 5 minutes
