How to Make Blueberry Cake Donuts
- Preheat the oven to 350 degrees F
- Combine the eggs, granulated sugar, coconut oil and vanilla into a large mixing bowl
- Mix until fully combined then fold in the flours and baking powder
- Fold the blueberries into the batter
- Transfer the batter to a piping bag or use Ziploc bag if you don’t have a piping bag
- Spray a donut pan with nonstick (my preferred for baking is coconut oil spray)
- Cut the tip of the piping bag and start to fill each donut mold until each is 3/4 of the way filled
- Top with extra blueberries if desired
- Bake in the oven for 10-12 minutes. The donuts will rise and a good test is using a toothpick. It will come out clean when fully baked
- Let cool completeley
- While the donuts are cooling, make the glaze!
- Combine the confectioners sugar with the milk (1 tbsp) and vanilla extract.
- Start with 1 tbsp of milk then add 1 tsp at a time until it reaches your desired consistency. You’ll want it on the thicker side so that it doesn’t absorb into the donuts
- Once the donuts are fully cooled, pour the glaze over the donuts while on a cooling rack. Add a piece of wax paper under the donuts to catch any excess glaze (easy clean up!)
- Let the glaze set for about 5 minutes
- Enjoy!

I prefer to use fresh but you can substitute fresh for frozen blueberries if that’s preferred. It should be noted that your batter will turn blue/purple from the frozen berries and it may add more liquid to the batter.

You can use any Ziploc bag, fill it with the batter and then cut the corner to pipe your donuts.
If there are any left you can store in an airtight container for up to 3 days at room temperature or 5 days in the fridge.
