These cake donuts are not only delicious but good for you too. They’re made with simple, clean ingredients so that you feel energized and not sluggish after eating them.

One of the best parts about this recipe is that it’s soooo easy to make. You can whip these up in about 20 minutes (or less the more you make them) and only take about 10 minutes to bake.

How to Make Blueberry Cake Donuts

  1. Preheat the oven to 350 degrees F
  2. Combine the eggs, granulated sugar, coconut oil and vanilla into a large mixing bowl
  3. Mix until fully combined then fold in the flours and baking powder
  4. Fold the blueberries into the batter
  5. Transfer the batter to a piping bag or use Ziploc bag if you don’t have a piping bag
  6. Spray a donut pan with nonstick (my preferred for baking is coconut oil spray)
  7. Cut the tip of the piping bag and start to fill each donut mold until each is 3/4 of the way filled
  8. Top with extra blueberries if desired
  9. Bake in the oven for 10-12 minutes. The donuts will rise and a good test is using a toothpick. It will come out clean when fully baked
  10. Let cool completeley
  11. While the donuts are cooling, make the glaze!
  12. Combine the confectioners sugar with the milk (1 tbsp) and vanilla extract.
  13. Start with 1 tbsp of milk then add 1 tsp at a time until it reaches your desired consistency. You’ll want it on the thicker side so that it doesn’t absorb into the donuts
  14. Once the donuts are fully cooled, pour the glaze over the donuts while on a cooling rack. Add a piece of wax paper under the donuts to catch any excess glaze (easy clean up!)
  15. Let the glaze set for about 5 minutes
  16. Enjoy!

Can I double the recipe to make 12 donuts?

Of course! The more donuts the merrier – just double the ingredient measurements and they’ll come out just as delicious.

Can I use frozen blueberries in this recipe?

I prefer to use fresh but you can substitute fresh for frozen blueberries if that’s preferred. It should be noted that your batter will turn blue/purple from the frozen berries and it may add more liquid to the batter.

Can I use regular all purpose flour instead of gluten free?

Yes, the result will be the same.

What can I use to pipe the donuts if I don’t have a piping bag?

You can use any Ziploc bag, fill it with the batter and then cut the corner to pipe your donuts.
