Toasted Burrata Sandwich with Pesto

This Toasted Burrata Sandwich with Pesto is the perfect lunch when you want something delicious but also easy to make. The burrata is creamy and pairs perfectly with the refreshing pesto.

Ingredients
 

  • 2 slices bread
  • 2-3 oz burrata cheese
  • 3 tbsp spinach pesto, recipe linked below
  • 1 tbsp butter, for cooking

Instructions
 

  • Heat a pan over medium and add 1 tbsp of butter once warm
  • Let the butter melt and spread it around the pan
  • Add a slice of bread to the panSpread the Spinach Pesto in an even layer on top of the bread
  • Break up the burrata and place it on top of the pesto
  • Add the other slice of bread on top
  • Flip the bread once it is a dark golden color
  • Cook until the other side is golden and the cheese is warm
  • Remove from the pan
  • Slice and enjoy!
