These Vanilla Cheesecake Bars are the perfect spring and summer treat. They are luscious and creamy, incredibly easy to make and delicious.
Graham Cracker Crust
- 1.5 cups graham cracker crumbs, about 10 graham cracker sheets
- 6 tbsp salted butter, melted
- 1 tbsp granulated sugar
Cheesecake Filling
- 16 oz plain cream cheese, softened to room temp
- 2/3 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
Toppings
- fresh blueberries, optional
- fresh strawberries, optional
- whipped cream, optional
1 loaf pan

Preheat the oven to 325 degrees F
First, combine the graham cracker crumbs with the butter and granulated sugar
Press firmly into the bottom of a loaf pan. The loaf pan should be lined with parchment paper
In a mixing bowl, beat the softened cream cheese and granulated sugar using a hand mixer
Add in the vanilla extract and eggs, beat until just combined
Next, pour the batter on top of the graham cracker layer
Bake at 325 degrees F for 45-50 minutes. The edges should be brown and the top should be set with a slight jiggle in the middle
Next, remove from the oven and chill at room temp for 2 hours
Refrigerate 6+ hours or overnight
Slice and top with whipped cream, blueberries and strawberries
