How to Make Vanilla Cheesecake Bars Recipe

  1. Preheat the oven to 325 degrees F and line a loaf pan with parchment paper
  2. First, combine the Graham cracker crumbs with the butter and granulated sugar
  3. Next, press firmly into the bottom of a loaf pan
  4. In a mixing bowl, beat the softened cream cheese and granulated sugar using a hand mixer
  5. Add in the vanilla extract and eggs, beat until just combined
  6. Next, pour the batter on top of the graham cracker layer
  7. Bake at 325 degrees F for 45-50 minutes
  8. Remove from the oven when done baking
  9. To know when the cheesecake is ready to be removed, the edges of the cheesecake should be brown and the top should be fully set. However, it should still have a slight jiggle in the middle.
  10. Chill at room temp for 2 hours
  11. Refrigerate 6+ hours or overnight 
  12. Slice and top with whipped cream, blueberries and strawberries
  13. Last but not least, enjoy!

Graham Cracker Crust

  • 1.5 cups graham cracker crumbs, about 10 graham cracker sheets
  • 6 tbsp salted butter, melted
  • 1 tbsp granulated sugar

Cheesecake Filling

  • 16 oz plain cream cheese, softened to room temp
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract

Toppings

  • fresh blueberries, optional
  • fresh strawberries, optional
  • whipped cream, optional
