Frosted Birthday Cake Cookies

Birthday Cake Cookies with Frosting are the perfect sweet treat. The soft and chewy cookie pairs perfectly with the creamy vanilla buttercream frosting on top. And who doesn't love sprinkles?!

Ingredients
 

  • 1/2 cup salted butter, softened to room temp
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 tbsp half & half, or heavy cream
  • 1 3/4 cup all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 cup sprinkles, plus extra for topping on frosted cookies

Vanilla Buttercream Frosting

  • 1/2 cup salted butter, softened to room temp
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350 degrees F
  • In a large mixing bowl, cream together the softened butter, sugar, egg, vanilla and half & half using an electric hand mixer
  • Blend until smooth and fully incorporated
  • Mix in the flour a 1/2 cup at a time using the electric hand mixer. With the last 1/2 cup also add in the baking powder and baking soda
  • Fold in the sprinkles
  • Use a 1.5-2 tbsp cookie scoop to portion out the dough
  • Place on a baking sheet lined with parchment paper spacing the cookie dough 1-2 inches apart
  • Bake for 12-15 minutes until the edges are slightly golden with the center soft
  • Remove from the oven and let cool on the baking sheet
  • Transfer to a cooling rack and make the vanilla buttercream frosting
  • To make the frosting, add the softened butter and vanilla extract to a bowl
  • Add in 1/2 cup of the powdered sugar at a time, using a hand mixer to combine
  • Mix until combined, smooth and creamy without any clumps
  • Transfer the frosting to a piping bag and frost the cookies once they are completely cooled
  • Add some extra sprinkles on top
  • Enjoy!
