Birthday Cake Cookies with Frosting are the perfect sweet treat. The soft and chewy cookie pairs perfectly with the creamy vanilla buttercream frosting on top. And who doesn't love sprinkles?!
- 1/2 cup salted butter, softened to room temp
- 3/4 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 tbsp half & half, or heavy cream
- 1 3/4 cup all purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/3 cup sprinkles, plus extra for topping on frosted cookies
Vanilla Buttercream Frosting
- 1/2 cup salted butter, softened to room temp
- 2 cups powdered sugar
- 1 tsp vanilla extract
Preheat the oven to 350 degrees F
In a large mixing bowl, cream together the softened butter, sugar, egg, vanilla and half & half using an electric hand mixer
Blend until smooth and fully incorporated
Mix in the flour a 1/2 cup at a time using the electric hand mixer. With the last 1/2 cup also add in the baking powder and baking soda
Fold in the sprinkles
Use a 1.5-2 tbsp cookie scoop to portion out the dough
Place on a baking sheet lined with parchment paper spacing the cookie dough 1-2 inches apart
Bake for 12-15 minutes until the edges are slightly golden with the center soft
Remove from the oven and let cool on the baking sheet
Transfer to a cooling rack and make the vanilla buttercream frosting
To make the frosting, add the softened butter and vanilla extract to a bowl
Add in 1/2 cup of the powdered sugar at a time, using a hand mixer to combine
Mix until combined, smooth and creamy without any clumps
Transfer the frosting to a piping bag and frost the cookies once they are completely cooled
Add some extra sprinkles on top
