Choc Chip Mini Muffins Recipe

Yield: 24 muffins
These Choc Chip Mini Muffins are the perfect bite. Made without any processed sugar, they are sweetened with maple syrup, applesauce and the mini chocolate chips of course. The texture of the muffins is light and fluffy while the flavor is comforting and delicious!

Ingredients
 

  • 1 large egg
  • 1/2 cup unsweetened applesauce
  • 2 tbsp olive oil
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup mini chocolate chips

Instructions
 

  • Preheat the oven to 375 degrees F
  • In a large mixing bowl, combined the egg, applesauce, maple syrup, olive oil and vanilla extract
  • Mix until combined
  • Fold in the dry ingredients
  • Mix until just combined
  • Fold in the mini chocolate chips
  • Spray a mini muffin pan with nonstick spray
  • Transfer the batter into the muffin molds, filling them until right below the top of the mold 
  • Bake for 12-14 minutes, or until edges are golden and a toothpick comes out of the center clean
  • Remove from the oven and let cool in the pan for about 10 minutes
  • Transfer the mini muffins to a cooling rack, they should come out easily. (NOTE: If you are having trouble, use a knife to loosen the edges)
  • Enjoy!
