This Blueberry Peach Crisp is the perfect dessert during the warmer months. It's refreshing, bursting with flavor and incredibly delicious. Luckily, it's also easy to make!
Blueberry Peach Filling
- 2 cups fresh blueberries
- 6 small peaches, peeled and sliced
- 1/2 cup granulated sugar
- 3 tbsp cornstarch
Crisp Topping
- 1/2 cup all purpose flour
- 1/2 cup rolled oats
- 1/2 cup dark brown sugar
- 1 tsp ground cinnamon
- 1/4 cup salted butter, melted
Preheat the oven to 350 degrees F
Peel and slice the peaches
Clean and dry the fresh blueberries
In a large mixing bowl, combined the fresh blueberries and peach slices
Add the granulated sugar and mix
Coat the fruit in the cornstarch
Transfer to a greased 9x9 square baking dish (I used ceramic)
Spread out in an even layer
Now, it's time to make the crisp topping
In a large bowl, combine the melted butter, flour, rolled oats, dark brown sugar and cinnamon
Mix until combined and it has formed into a crumble (there should be some clumps)
Cover the fruit filling with the crisp topping
Bake in the oven for 45-50 minutes or until the crisp topping is golden and crisp. The fruit filling should be bubbling through parts of the topping.
Remove from the oven and let cool to room temperature
Serve as is or with some vanilla bean ice cream
Enjoy!
