Funfetti Blondies with White Chocolate Chips

These Funfetti Blondies are an easy and delicious dessert. Perfect for any celebration with the addition of the sprinkles and white chocolate chips!

Ingredients
 

  • 1 large egg
  • 1 large egg yolk
  • 1 cup dark brown sugar, packed
  • 1/4 cup salted butter, melted
  • 1/4 cup whole milk or buttermilk
  • 2 tsp vanilla extract
  • 1 1/2 cups all purpose flour, or gluten free all purpose flour
  • 1/3 cup white chocolate chips
  • 1/4 cup rainbow sprinkles

Equipment

  • 1 Square 8x8 Pan
  • parchment paper

Instructions
 

  • Preheat the oven to 350 degrees F
  • Add the eggs, brown sugar, butter, milk and vanilla extract to a large mixing bowl
  • Mix until fully combined
  • Add flour and mix until just combined
  • Fold in the white chocolate chips and sprinkles
  • Pour into a 8×8 baking pan that is lined with greased parchment paper
  • Spread into an even layer
  • Bake in the oven for 30-33 minutes
  • Let cool for a minimum of 30 minutes before slicing
  • Slice and enjoy!
