These Kodiak Chocolate Chip Muffins are easy to make and the perfect sweet breakfast while sneaking in some extra protein. The muffins are made with pancake mix and a few other simple ingredients, making it an ideal meal-prep-friendly recipe.
- 1/2 cup Salted Butter, melted
- 1/4 cup Granulated Sugar
- 1 large Egg
- 1 tsp Vanilla Extract
- 1 cup Milk
- 2 cups Kodiak Cake Pancake Mix
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 cup Semi-sweet Chocolate Chips
In a large mixing bowl, add the butter, sugar, egg and vanilla extract
Mix until fully combined
Add the Kodiak Cake Mix, baking powder and baking soda
Pour in the milk
Mix until just combined
Fold in the chocolate chips
Let the batter rest for 30 minutes and preheat the oven to 425 degrees F while the batter rests
(Optional Tip: Line a muffin tray with liners in every other mold. I use two tins to bake them side-by-side at the same time. This allows the muffins to have more room to rise)
Once the oven is ready, use a 2 tbsp cookie scoop to portion out the dough into the muffin liners. (You can also use a regular spoon and fill the muffin liners up a little over halfway)
Bake at 425 degrees F for 7 minutes
Reduce the oven temperature to 350 degrees F and bake for another 8-10 minutes
When ready, remove from the oven. A toothpick should come out of the oven clean
Let cool for 5 minutes in the muffin tin then transfer to a cooling rack
