From the texture to the flavor, it is everything you want in a chocolate chip muffin! Plus, this recipe is incredibly easy to make or prep for the week ahead.

Why Use Pancake Mix for Muffins?!

I know what you’re thinking.

Why would I use pancake mix to make the muffins when I can just use regular flour?

I used to wonder the same thing, until I made this recipe.

Pancake mix makes the process a bit easier since it already includes most of the dry ingredients.

However, for this recipe, I added additional baking powder and baking soda so that the muffins don’t come out flat like a pancake.

Besides that, you will just need to incorporate the wet ingredients and follow the instructions below!

What you’ll be left with is a lighter and fluffier muffin due to using the pancake mix.

How to Make Kodiak Chocolate Chip Muffins

  1. In a large mixing bowl, add the butter, sugar, egg and vanilla extract
  2. Mix until fully combined
  3. Add the Kodiak Cake Mix, baking powder and baking soda
  4. Pour in the milk
  5. Mix until just combined
  6. Fold in the chocolate chips
  7. Let the batter rest for 30 minutes and preheat the oven to 425 degrees F while the batter rests
  8. Once the oven is ready, use a 2 tbsp cookie scoop to portion out the dough into the muffin liners. (You can also use a regular spoon and fill the muffin liners up a little over halfway)
  9. Bake at 425 degrees F for 7 minutes
  10. Reduce the temperature to 350 degrees F and bake for another 8-10 minutes
  11. Once a toothpick comes out of the center clean, remove from the oven
  12. Let cool for 5 minutes in the muffin tin then transfer to a cooling rack
  13. Enjoy!

If you use Gluten Free Kodiak Cake Mix or an alternative Gluten Free Pancake mix, this recipe is gluten free friendly.

Can I use any pancake mix?

Yes! Any pancake mix will work for this recipe. Substitute at a 1:1 ratio.

Will regular flour work in this recipe instead of pancake mix?

It might…but I haven’t tested it. I recommend sticking to pancake mix as it typically has other ingredients already incorporated compared to using regular flour.

  • 1/2 cup Salted Butter, melted
  • 1/4 cup Granulated Sugar
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 1 cup Milk
  • 2 cups Kodiak Cake Pancake Mix
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 cup Semi-sweet Chocolate Chips

Instructions
 

  • In a large mixing bowl, add the butter, sugar, egg and vanilla extract
  • Mix until fully combined
  • Add the Kodiak Cake Mix, baking powder and baking soda
  • Pour in the milk
  • Mix until just combined
  • Fold in the chocolate chips

  • (Optional Tip: Line a muffin tray with liners in every other mold. I use two tins to bake them side-by-side at the same time. This allows the muffins to have more room to rise)
