These Banana Blackberry Oatmeal Muffins are the perfect sweet breakfast. By using natural and clean ingredients, these muffins are satiating and good for you too.
- 1/4 cup salted butter, melted
- 1/4 cup dark brown sugar, or Golden Monk Fruit Sweetener
- 2 large eggs
- 2 medium bananas, mashed
- 1/2 cup vanilla greek yogurt
- 1 cup all purpose flour
- 3/4 cup rolled oats
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 cup fresh blackberries
To a large mixing bowl, add the melted butter, brown sugar, eggs, mashed bananas and vanilla greek yogurt
Mix together using a whisk until combined
Add in the flour, rolled oats, baking soda, baking powder and ground cinnamon
Fold into the batter using a rubber spatula
Once combined, toss the blackberries in 1 tbsp of flour then add to the batter
Gently fold into the batter until evenly spread out in the batter
Rest the batter at room temperature for 30 minutes
While the batter is resting, preheat the oven to 425 degrees F
Add muffin liners in every other mold. This is optional, but allows the muffins to rise high
Portion out the batter into the muffin liners using a 2 tbsp cookie scoop. It should fill about 3/4 of the way
Bake at 425 degrees F for 7 minutes then reduce the temperature to 350 degrees F and bake for an additional 7-9 minutes
Remove the muffins from the oven when a toothpick comes out of the center clean
Let cool slightly and enjoy!
