Ingredients

  • 1/4 cup salted butter, melted
  • 1/4 cup dark brown sugar, or Golden Monk Fruit Sweetener
  • 2 large eggs
  • 2 medium bananas, mashed
  • 1/2 cup vanilla greek yogurt
  • 1 cup all purpose flour
  • 3/4 cup rolled oats
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 cup fresh blackberries

Instructions

  • To a large mixing bowl, add the melted butter, brown sugar, eggs, mashed bananas and vanilla greek yogurt
  • Mix together using a whisk until combined
  • Add in the flour, rolled oats, baking soda, baking powder and ground cinnamon
  • Fold into the batter using a rubber spatula
  • Once combined, toss the blackberries in 1 tbsp of flour then add to the batter
  • Gently fold into the batter until evenly spread out in the batter
  • Rest the batter at room temperature for 30 minutes
  • While the batter is resting, preheat the oven to 425 degrees F
  • Add muffin liners in every other mold. This is optional, but allows the muffins to rise high
  • Portion out the batter into the muffin liners using a 2 tbsp cookie scoop. It should fill about 3/4 of the way
  • Bake at 425 degrees F for 7 minutes then reduce the temperature to 350 degrees F and bake for an additional 7-9 minutes
  • Remove the muffins from the oven when a toothpick comes out of the center clean
  • Let cool slightly and enjoy!
