This Apricot Slice is a delicious and easy-to-make dessert. It has a soft sugar cookie base topped with a layer of apricot jam and another cookie layer on top. Every bite is even more delicious than the last!
- 1 cup Salted Butter, softened
- 1 cup Granulated Sugar
- 1 large Egg, room temperature
- 2 tsp Vanilla Extract
- 2 1/4 cups All Purpose Flour
- 1 1/2 tsp Baking Powder
- 10 oz Apricot Jam
Preheat the oven to 350 degrees F
Grease a square 8x8 pan with non stick spray and add a piece of parchment paper for easy removal
To a large mixing bowl, add the softened butter, sugar, egg and vanilla extract
Use a hand electric mixer to combine until whipped and creamy
Add the dry ingredients
Blend again until combined
Transfer about 2/3 of the dough to the pan and spread in an even layer to fully cover the bottom (Reserve 1/3 of the dough for topping)
Add the apricot jam and spread in an even layer
Press pieces of the remaining dough on top, leaving a few pockets for the jam to show through
Bake for 60-64 minutes or until the edges are golden and dough is fully baked
Let cool completely
Remove from the pan and slice into bars
