How to Make Apricot Slice Recipe

  1. Preheat the oven to 350 degrees F
  2. Grease a square 8×8 pan with non stick spray and add a piece of parchment paper for easy removal
  3. To a large mixing bowl, add the softened butter, sugar, egg and vanilla extract
  4. Use a hand electric mixer to combine until whipped and creamy
  5. Add the dry ingredients
  6. Blend again until combined
  7. Transfer about 2/3 of the dough to the pan and spread in an even layer to fully cover the bottom (Reserve 1/3 of the dough for topping)
  8. Add the apricot jam and spread in an even layer
  9. Press pieces of the remaining dough on top, leaving a few pockets for the jam to show through
  10. Bake for 60-64 minutes or until the edges are golden and dough is fully baked
  11. Let cool completely
  12. Remove from the pan and slice into bars
  13. Enjoy!

It can! Swap the All Purpose Flour for a Gluten Free All Purpose Flour at a 1:1 ratio.

Yes! Swap the apricot jam out for any of your favorite jam flavors at a 1:1 ratio.

Can I use unsalted butter?

You can, however, I recommend adding about 1/2 tsp of salt to enhance the flavor of the other ingredients.

How do I know the Apricot Bars are done baking?

When a toothpick comes out of the center clean. It can be hard to tell with the jam layer, however, there should be no batter on the toothpick. The edges and tops should be golden color as well.

What is the best way to store the bars?

Store in an airtight container at room temperature for up to 3 days or in the fridge for 5 days.

  • 1 cup Granulated Sugar

  • 1 1/2 tsp Baking Powder
  • 10 oz Apricot Jam
