Honey Cookies (Refined Sugar Free)

Yield: 12 cookies
Honey Cookies are the perfect dessert to make when you want a sweet treat without refined sugar. An easy and tasty recipe that can also be a fun cookie decorating activity.

Ingredients
 

  • 1 1/3 cup gluten free flour
  • 1/2 tsp cornstarch
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 tbsp salted butter
  • 1/3 cup honey
  • 3 tsp vanilla extract
  • 1 egg

Instructions
 

  • Preheat oven to 350 degrees F
  • Line a baking sheet with parchment paper
  • Melt the salted butter and leave separate to cool slightly
  • Combine all of the wet ingredients in a bowl 
  • Add the dry ingredients to the wet and mix until fully combined. Make sure to not over mix the dough
  • Form the dough into a flat disk, cover in plastic wrap and place in the fridge for at least 1 hour. This allows the butter to get cold so that the honey sugar cookies are fluffy + soft
  • Remove from fridge and let cool for about five minutes. This allows the dough to soften just enough so that as you roll it out, cracks don't form
  • Roll the dough out until it is about 1/4 inch thick and then use cookie cutters to make your cookies!
  • Repeat until all the dough is used up
  • Place the honey sugar cookies on the lined baking sheet with 1 inch between each cookie
  • Next, bake for 5-7 minutes or until the bottoms of the honey sugar cookies are slightly golden and the center is fully baked
  • Let the honey sugar cookies cool completely before decorating or enjoy plain!
