These Gluten Free Blondies are the ultimate sweet treat. The rich chocolate chips pair perfectly with the sea salt flakes on top. The batter is easy-to-make and can be done in one bowl. By using dark brown sugar in the batter, the texture comes out fudgy and chewy. You can use any type of chocolate chip in this recipe, however, I love to use a semi-sweet or dark chocolate chips.
- 1 large Egg
- 1 Egg yolk
- 1 cup Dark Brown Sugar, packed
- 1/4 cup Salted Butter, melted
- 1/4 cup Heavy Cream or Half & Half, or Whole Milk
- 2 tsp Vanilla Extract
- 1 1/2 cups Gluten-Free All Purpose Flour, or Regular All Purpose Flour
- 1/3 cup Semi-Sweet Chocolate Chips, plus extra for topping
Preheat the oven to 350 degrees F
Add the eggs, brown sugar, butter, buttermilk and vanilla extract to a large mixing bowl
Mix until fully combined
Add flour and mix until just combined
Fold in the chocolate chips
Pour into a 8x8 baking pan that is lined with greased parchment paper
Top with extra chocolate chips
Bake in the oven for 30 minutes, rotating the pan 180 degrees halfway through the baking time
Remove from the oven and top with flaky sea salt
Let cool for a minimum of 30 minutes before slicing
