These Gluten Free Blondies are the ultimate treat. They can be made gluten free, are easy to make and topped with some flaky sea salt for the perfect sweet and salty combo.
- 1 egg, large
- 1 egg yolk , large
- 1 cup dark brown sugar, packed
- 1/4 cup butter, melted
- 1/4 cup buttermilk or kefir
- 2 tsp vanilla extract
- 1 1/2 cups gluten free flour
- 1/3 cup chocolate chips
- extra chocolate chips, for topping
Preheat the oven to 350 degrees F
Add the eggs, brown sugar, butter, buttermilk and vanilla extract to a large mixing bowl
Mix until fully combined
Add flour and mix until just combined
Fold in the chocolate chips
Pour into a 8x8 baking pan that is lined with greased parchment paper
Top with extra chocolate chips
Bake in the oven for 30 minutes, rotating the pan 180 degrees halfway through the baking time
Remove from the oven and top with flaky sea salt
Let cool for a minimum of 30 minutes before slicing
