These are the BEST blondies ever. I know that’s a big statement but I stand by it!

I tested this recipe three times to get the perfect texture and flavor for you. A blondie shouldn’t be cakey but fudgy, dense and rich with a thin, crinkly top.

Basically a cookie but in brownie form!

Luckily, this recipe is incredibly easy to make. So easy that I’ve made this batter in just 8 minutes. Yes, I’ve timed it!

In addition, you only need one bowl to whip up the blondie batter. Leaving you with an easy clean up and less dishes!

What is Kefir?

Kefir is fermented milk of a cow, goat, or sheep.

Why is kefir used in this recipe?

Kefir adds to the richness of the blondies but also creates the perfect texture. The creaminess of the kefir creates the ultimate gooey inside of the blondie.

You can also use regular buttermilk and the blondies will come out the same!

Kefir Substitutions

  • Buttermilk (recommended swap 1:1 ratio)
  • Yogurt thinned out with milk (for 1 cup of kefir use 3/4 cup of yogurt + 1/4 cup milk)
  • Melted butter (1:1 ratio) + 1/4 tsp baking powder

What is a Blondie?!

If you’ve never heard of blondies before, you are in for a treat! I think of blondies as cookies but in brownie form. They are thicker and have a more fudge-like texture than your typical cookie.

BUT they are just as delicious!

Blondies are typically softer than a cookie and that’s what I love about them. The melted chocolate paired with the flaky sea salt makes them heaven in every bite!

How to Make Gluten Free Blondies

  1. Preheat the oven to 350 degrees F
  2. Add the eggs, brown sugar, butter, kefir and vanilla extract to a large mixing bowl
  3. Mix until fully combined
  4. Add flour and mix until just combined
  5. Fold in the chocolate chips
  6. Pour into a 8×8 baking pan that is lined with greased parchment paper
  7. Top with extra chocolate chips
  8. Bake in the oven for 30 minutes, rotating the pan 180 degrees halfway through the baking time
  9. Remove from the oven and top with flaky sea salt
  10. Let cool for a minimum of 30 minutes before slicing
  11. Enjoy!

Frequently Asked Questions

What’s the difference between a blondie and a brownie?

Blondies use vanilla extract and brown sugar instead of cocoa powder to get their flavor, while brownies use chocolate and cocoa. Plus, brownies usually include white sugar instead of brown sugar.

Can I use regular all purpose flour for this recipe?

Yes! Use a 1:1 ratio for all purpose flour.

I do not recommend using oat flour, coconut flour or almond flour as these have not been tested and may affect the final result.

Can I add other mix-ins?

You can add any mix-ins you’d like! For example, any type of chocolate chips/chunks, nuts, nut butter, seeds, candy, sprinkles and more!

Do I have to use kefir to make these blondies?

You don’t have to! I would suggest swapping for buttermilk if you don’t have kefir on hand or at your grocery store. I provide alternatives to kefir above in this post.

How should these blondies be stored?

Store in an airtight container at room temperature for up to 3 days or in the fridge for up to 5. However, they are so good that they probably won’t last that long!

  • 1/4 cup buttermilk or kefir
  • 2 tsp vanilla extract
  • 1 1/2 cups gluten free flour

  • extra chocolate chips, for topping
