I tested this recipe many times to get the perfect texture and flavor for you. A blondie texture shouldn’t be fluffy but fudgy with a crinkly top. It’s basically a cookie but in brownie form!

So, what is a Blondie?!

If you’ve never heard of blondies before, you are in for a treat! I like to think of blondies as cookies but in brownie form. They are thicker and have a more fudge-like texture than your typical cookie.

Blondies are typically softer than a cookie and that’s what I love about them. The melted chocolate paired with the flaky sea salt on top, makes them a dream come true in every bite!

Frequently Asked Questions

What’s the difference between a blondie and a brownie?

Blondies use vanilla extract and brown sugar instead of cocoa powder to get their flavor, while brownies use chocolate and cocoa. Plus, brownies usually include white sugar instead of brown sugar.

Can I use regular all purpose flour for this recipe?

Yes! Use a 1:1 ratio for all purpose flour.

I do not recommend using oat flour, coconut flour or almond flour as these have not been tested and may affect the final result.

Can I add other mix-ins?

You can add any mix-ins you’d like! For example, any type of chocolate chips/chunks, nuts, nut butter, seeds, candy, sprinkles and more!

Do I have to use kefir to make these blondies?

You don’t have to! I would suggest swapping for buttermilk if you don’t have kefir on hand or at your grocery store. I provide alternatives to kefir above in this post.

How should these blondies be stored?

Store in an airtight container at room temperature for up to 3 days or in the fridge for up to 5. However, they are so good that they probably won’t last that long!

Ingredients
 

  • 1 large Egg
  • 1 Egg yolk
  • 1 cup Dark Brown Sugar, packed
  • 1/4 cup Salted Butter, melted
  • 1/4 cup Heavy Cream or Half & Half, or Whole Milk
  • 2 tsp Vanilla Extract
  • 1 1/2 cups Gluten-Free All Purpose Flour, or Regular All Purpose Flour
  • 1/3 cup Semi-Sweet Chocolate Chips, plus extra for topping

Equipment

  • 8×8 pan
  • parchment paper

Instructions
 

  • Preheat the oven to 350 degrees F
  • Add the eggs, brown sugar, butter, buttermilk and vanilla extract to a large mixing bowl
  • Mix until fully combined
  • Add flour and mix until just combined
  • Fold in the chocolate chips
  • Pour into a 8×8 baking pan that is lined with greased parchment paper
  • Top with extra chocolate chips
  • Bake in the oven for 30 minutes, rotating the pan 180 degrees halfway through the baking time
  • Remove from the oven and top with flaky sea salt
  • Let cool for a minimum of 30 minutes before slicing
  • Enjoy!
