This recipe for Egg White Bites is better than the ones you'll find at your local Starbucks. They are made with egg whites, ricotta cheese, and red bell peppers. Once baked, they are light, fluffy and absolutely delicious!The process of making these egg white bites is incredibly easy too. You can use a whisk, electric hand mixer, blender or food processor to make this meal-prep friendly breakfast.
- 2 cups Ricotta Cheese
- 1.5 cups Liquid Egg Whites
- 1 Bell Pepper, diced
- Salt, to taste
- Pepper, to taste
Preheat the oven to 350 degrees F
Spray a 12-cup muffin pay with your preferred nonstick spray, oil or butter to grease the molds
Too make the batter, a food processor/blender is ideal for blending the egg whites and ricotta cheese together. However, you can also use a whisk!
If using a bowl, add the ricotta, liquid egg whites, salt and pepper together and whisk together. If using a food processor/blender, and the liquid egg whites, ricotta cheese, salt and pepper; then blend until smooth and creamy.
Pour the egg white mixture into the greased muffin tin 3/4 of the way
Add some of the diced red peppers
Bake in the oven for 25-30 minutes until the edges are golden on the edges and cooked fully through
Let cool slightly and enjoy!
