These Starbucks Egg White Bites are made without cottage cheese, using ricotta cheese instead. Baked in a muffin pan for a creamy and fluffy texture. A Starbucks-style recipe that is also an easy grab-and-go breakfast.
- 2 cups Ricotta Cheese
- 1.5 cups Liquid Egg Whites
- 1 Bell Pepper, diced
- Salt, to taste
- Pepper, to taste
Preheat the oven to 350 degrees F.
Spray a 12-cup muffin pay with your preferred nonstick spray, oil or butter to grease the molds.
Add all of the ingredients to a food processor/blender. However, you can also use a whisk in a bowl. (If using a bowl, add the ricotta, liquid egg whites, salt and pepper together and whisk together).
Pour the egg white mixture into the greased muffin tin until they are 3/4 of the way full.
Add some of the diced red peppers (or other fillings, if desired).
Bake in the oven for 25-30 minutes until the edges are golden on the edges and cooked fully through
Let cool slightly and enjoy!
