Greek Orzo Pasta Salad with Lemon Dijon Dressing

Greek Orzo Pasta Salad with Lemon Dijon Dressing is a healthy and delicious meal to make for lunch or dinner with leftovers to last the whole week!

Ingredients
 

  • 8 oz orzo
  • 1 cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 15 oz canned chickpeas, rinsed and drained
  • 1/2 red onion, diced
  • 1 cup feta cheese, cubed
  • 1 pinch salt, to taste
  • 1 pinch pepper, to taste

Lemon Dijon Dressing

  • 1/4 cup olive oil
  • 1 lemon, juice
  • 1 tbsp dijon mustard
  • 1 tbsp honey

Instructions
 

  • Cook the orzo according to package instructions
  • While the orzo is cooking, prep the other ingredients as needed
  • When the orzo is done cooking, rinse with cold water and drain
  • Add the orzo to a large mixing bowl along with the cucumber, cherry tomatoes, chickpeas, red onion and feta cheese.
  • Season with salt and pepper to taste
  • Mix until combined and ingredients are well incorporated with the orzo pasta.
  • Now it's time to make the dressing! Mix together all of the ingredients in a small bowl with a whisk or fork until fully combined.
  • Pour over the pasta salad when you are ready to serve the dish. Mix until combined and enjoy!
