Greek Orzo Pasta Salad with Lemon Dijon Dressing is a healthy and delicious meal to make for lunch or dinner with leftovers to last the whole week!
- 8 oz orzo
- 1 cucumber, diced
- 2 cups cherry tomatoes, halved
- 15 oz canned chickpeas, rinsed and drained
- 1/2 red onion, diced
- 1 cup feta cheese, cubed
- 1 pinch salt, to taste
- 1 pinch pepper, to taste
Lemon Dijon Dressing
- 1/4 cup olive oil
- 1 lemon, juice
- 1 tbsp dijon mustard
- 1 tbsp honey
Cook the orzo according to package instructions
While the orzo is cooking, prep the other ingredients as needed
When the orzo is done cooking, rinse with cold water and drain
Add the orzo to a large mixing bowl along with the cucumber, cherry tomatoes, chickpeas, red onion and feta cheese.
Season with salt and pepper to taste
Mix until combined and ingredients are well incorporated with the orzo pasta.
Now it's time to make the dressing! Mix together all of the ingredients in a small bowl with a whisk or fork until fully combined.
Pour over the pasta salad when you are ready to serve the dish. Mix until combined and enjoy!
