    Greek Orzo Pasta Salad with Lemon Dijon Dressing is a healthy and delicious meal to make for lunch or dinner with leftovers to last the whole week!

    There is nothing better than an easy recipe that is also delicious and good for you! This Greek Orzo Pasta Salad with Lemon Dijon Dressing is all of those things, making it the perfect meal-prep friendly recipe.

    You can have it for lunch or dinner, whenever you need something with minimal effort. All of the heavy lifting is done after your ingredients are prepped!

    Not only is it easy to make, it's refreshing with all of the different vegetables while also satisfying. The feta cheese and orzo pasta help fill you up and give your body energy.

    This recipe truly ticks off all the boxes (at least in my book) - it's easy, quick, nutritious and delicious!

    Main Ingredients

    • Orzo pasta - I linked two different gluten free orzo pasta products in the FAQ section, but this one is a great option that you can find anywhere as well.
    • Cucumber - The cucumber should be diced small so that there are no big chunks in a single bite.
    • Tomato - Use any cherry sized tomato that you like or can find at the grocery store.
    • Chickpeas - Any brand of chickpeas will do. Just make sure to rinse and drain them before adding into the pasta salad. You may also want to pat them dry if needed.
    • Feta cheese - Any feta cheese brand will work. The cubes should be tiny to match the size of the other vegetables.
    • Lemon - This will be used for the dressing
    • Honey - You can use any honey that you have on hand. If you don't have honey, I recommend swapping for maple syrup or agave.
    • Olive oil - Any classic olive oil will work well in this recipe. You will only need this for the dressing.
    • Dijon mustard - I just pick up a store brand of dijon mustard to always keep around the house for recipes and dressings just like this! You could also use a Honey Mustard if that is what you have available to you.
    Ingredients to Make a Greek Orzo Pasta Salad

    What is orzo?

    Many people ask if orzo is more like rice or pasta? Orzo is an Italian style pizza despite its similar appearance to rice. It's typically made of semolina flour.

    Another difference between orzo and pasta is that orzo has a higher concentration of both protein and carbs compared to the amount in rice.

    How to Make Greek Orzo Pasta Salad

    1. Cook the orzo pasta according to the package instructions
    2. While the orzo is cooking, prep the other ingredients as needed
    3. When the orzo is done cooking, rinse with cold water and drain
    4. Add the orzo to a large mixing bowl along with the cucumber, cherry tomatoes, chickpeas, red onion and feta cheese.
    5. Season with salt and pepper to taste
    6. Mix until combined and ingredients are well incorporated with the orzo pasta.
    7. Now it's time to make the dressing! Mix together all of the ingredients in a small bowl with a whisk or fork until fully combined.
    8. Pour over the pasta salad, mix until combined and enjoy!

    Is orzo gluten-free?

    Typically orzo is not gluten free but you can find gluten free options such as these products from Jovial or DeLallo

    Can I use any kind of Pasta?

    Any short pasta shape will work in this recipe if you do not have orzo on hand.

    How do I know the orzo is done cooking?

    Orzo takes about 10-12 minutes to cook and should have a firm, chewy texture. Make sure to stir occasionally during the cooking process so that the pasta doesn't stick together.

    What other dressings can I use?

    You can use any dressing you want or your favorite Greek dressing from the store. However, I love to make the Lemon Dijon Dressing that I share below and used for this recipe! It's light, flavorful and pairs perfectly with the other ingredients.

    How should this pasta salad be stored?

    Store in an airtight container in the fridge for up to 5 days.

    Ingredients
      

    • 8 oz orzo
    • 1 cucumber diced
    • 2 cups cherry tomatoes halved
    • 15 oz canned chickpeas rinsed and drained
    • ½ red onion diced

    • 1 pinch pepper to taste

    • ¼ cup olive oil
    • 1 lemon juice

when the milkshake craving hits…this is what I make and it does not disappoint!!! the key to making this taste like a vanilla milkshake is safeandfair vanilla ice cream protein powder. it’s delicious AND kid friendly too 🥳

RECIPE
- 2 small bananas, frozen
- 1 tbsp chia seeds
- 1 tbsp hemp seeds
- 1 tbsp ground flax seeds
- 1 serving safeandfair vanilla ice cream protein powder 
- 1 cup almond milk (or milk of choice)
- 1 tsp vanilla extract 

Blend all of the ingredients together until creamy, top with sprinkles for some extra fun and enjoy!

- 1/2 cup rolled oats
- 1/2 tbsp chia seeds
- 1/2 tbs hemp seeds
- 1/2 tbsp honey/maple syrup
- 1 tsp matcha powder 
- 1 serving vanilla protein powder (optional)
- 1 cup almond milk (or milk of choice)
- toppings : coconut and fresh blueberries 

Mix all the ingredients together, except for the toppings and let sit in the fridge overnight. Take out when ready to eat and add any toppings your heart desires 🫐🥥

as the weather gets warmer, i’m starting to craveeee s’mores! to make these s’mores brownies i used pamelasproducts brownie mix and honey grahams…LIFE CHANGING if you ask me! # ad 

How to Make S’mores Brownies - 

1. Make the brownie batter according to the package instructions (the batter will be thick)
2. Crush the graham crackers and add to the batter with mini marshmallows (or big marshmallows cut into fourths)
3. Mix and spread into an 8x8 baking pan lined with parchment paper.
4. Add extra graham cracker and marshmallow on top
5. Bake according to the package instructions
6. Let cool, cut the brownies and enjoy!

The brownies come out insanely fudgy and delicious. The pockets of marshmallow and crunch from the graham cracker are absolute perfection👌🏼 #pamelascreator

ingredients
- 1 cup frozen pineapple
- 1 cup frozen mango
- 1/4 avocado, frozen 
- 1 serving protein powder 
- 1 tbsp honey
- 1 tsp matcha powder 
- 1 to 1.5 cups coconut water (depends on your smoothie thickness preference)

    i have never met anyone who didn’t like pop tart i have never met anyone who didn’t like pop tarts growing up, have you?

let me introduce you to my adult version of this childhood favorite. i use lantanafoods Dark Chocolate Hummus as the filling and it was a dream come true 🍫 it adds just the right amount of sweetness, taking me right back to my childhood but without the sugar hangover 🤪

HOW TO MAKE ⬇️ 
1. cut two rectangles out of pre-made pie dough
2. add about 2 tbsp of hummus in the center and spread it out a little without going to the edges
3. press along the four sides with a fork
4. bake in the oven at 425 degrees F for 10-12 minutes or until the dough is golden and fully baked through
5. cool slightly and enjoy!
