There is nothing better than an easy recipe that is also delicious and good for you! This Greek Orzo Pasta Salad with Lemon Dijon Dressing is all of those things, making it the perfect meal-prep friendly recipe.

You can have it for lunch or dinner, whenever you need something with minimal effort. All of the heavy lifting is done after your ingredients are prepped!

Not only is it easy to make, it’s refreshing with all of the different vegetables while also satisfying. The feta cheese and orzo pasta help fill you up and give your body energy.

This recipe truly ticks off all the boxes (at least in my book) – it’s easy, quick, nutritious and delicious!

Main Ingredients

  • Orzo pasta – I linked two different gluten free orzo pasta products in the FAQ section, but this one is a great option that you can find anywhere as well.
  • Cucumber – The cucumber should be diced small so that there are no big chunks in a single bite.
  • Tomato – Use any cherry sized tomato that you like or can find at the grocery store.
  • Chickpeas – Any brand of chickpeas will do. Just make sure to rinse and drain them before adding into the pasta salad. You may also want to pat them dry if needed.
  • Feta cheese – Any feta cheese brand will work. The cubes should be tiny to match the size of the other vegetables.
  • Lemon – This will be used for the dressing
  • Honey – You can use any honey that you have on hand. If you don’t have honey, I recommend swapping for maple syrup or agave.
  • Olive oil – Any classic olive oil will work well in this recipe. You will only need this for the dressing.
  • Dijon mustard – I just pick up a store brand of dijon mustard to always keep around the house for recipes and dressings just like this! You could also use a Honey Mustard if that is what you have available to you.

Many people ask if orzo is more like rice or pasta? Orzo is an Italian style pizza despite its similar appearance to rice. It’s typically made of semolina flour.

Another difference between orzo and pasta is that orzo has a higher concentration of both protein and carbs compared to the amount in rice.

While orzo has more protein than rice, you can add this Argentine Red Shrimp to the dish. It has delicious flavor and helps you hit your protein goals!

How to Make Greek Orzo Pasta Salad

  1. Cook the orzo pasta according to the package instructions
  2. While the orzo is cooking, prep the other ingredients as needed
  3. When the orzo is done cooking, rinse with cold water and drain
  4. Add the orzo to a large mixing bowl along with the cucumber, cherry tomatoes, chickpeas, red onion and feta cheese.
  5. Season with salt and pepper to taste
  6. Mix until combined and ingredients are well incorporated with the orzo pasta.
  7. Now it’s time to make the dressing! Mix together all of the ingredients in a small bowl with a whisk or fork until fully combined.
  8. Pour over the pasta salad, mix until combined and enjoy!

  • 15 oz canned chickpeas, rinsed and drained
  • 1/2 red onion, diced
  • 1 cup feta cheese, cubed
  • 1 pinch salt, to taste
  • 1 pinch pepper, to taste

Lemon Dijon Dressing

  • 1/4 cup olive oil
  • 1 lemon, juice
  • 1 tbsp dijon mustard
  • 1 tbsp honey
