This recipe for Crispy Garlic Parmesan Potatoes is the ideal side dish. The potatoes are scored and brushed in a delicious olive oil, parmesan, garlic and onion mixture. After baking, the bottom is perfectly crispy while the center of the potato halves are soft and tender.
- 2 lb Gold Potatoes or Baby Potatoes, halved and scored
- 1/2 cup Olive Oil
- 1/3 cup Grated Parmesan
- 2 tsp Onion Powder
- 1 tsp Garlic Powder, or 2 tbsp of minced garlic
- Sea Salt, to taste
Preheat the oven to 425 degrees F
Mix the olive oil, grated cheese, onion powder, garlic and salt together in a bowl
Coat the bottom of a baking tray with the olive oil mixture
Cut the potatoes in half and score the bottoms of each with 2-4 cuts in each direction depending on the size of the potato (see FAQ section for scoring instructions)
Place face down on the pan and brush the top of the potatoes with the olive oil and seasoning mixture
Bake in the oven for 35-45 minutes or until the bottom of the potatoes are nicely golden and crisp
Remove from the oven and let cool until the pan stops sizzling. I typically let them cool for 5-10 minutes
