This is hands down one of the best recipes I have ever made. It’s addicting and incredibly delicious.

It’s not hard to make with the prep takes the most time but every second is worth it when you take that first bite. This entire pan did not last more than 20 minutes once it was ready to be eaten.

In addition, the ingredients are accessible and can be found at any grocery store local to you. I linked some of my favorite products that you can also order via Amazon.

Ingredient Notes

  • Potatoes – Also known as one of the best foods to exist. I specify in the FAQ section which potatoes are the absolute best for this recipe.
  • Grated Parmesan Cheese – Use any grated parmesan that you can find at your favorite or local grocery store.
  • Garlic Powder – A spice derived from dehydrated garlic to enhance the flavoring of these crispy potatoes. You can find garlic powder at your local store.
  • Onion Powder – I like to think of Onion Powder as the spice that you can never add too much of. It adds such a delicious flavor and can be found at your local store.
  • Sea Salt – A must when baking potatoes. It adds the most delicious flavor and texture to these crispy potatoes. I highly recommend using sea salt for your seasoning.

Ways to Make these Potatoes Extra Crispy

There are a few ways that enhance the crispiness of those parmesan crusted potatoes.

The first trick is scoring the potatoes 2-3 times each way on the bottom of each potato half. This allows the potatoes to being incredibly crispy while also leaving the inside of the potato soft and fluffy.

Another trick to making these potatoes crispy is adding the olive oil and cheese mixture directly to the baking tray without any foil. This allows the potatoes to create a delicious and crispy layer on the bottom of each potato half.

How to Make Parmesan Crusted Potatoes

  1. Preheat the oven to 425 degrees F
  2. Mix the olive oil, grated parmesan and seasonings together
  3. Coat the bottom of a baking tray with the olive oil mixture
  4. Cut the potatoes in half and score the bottoms of each with 2-3 cuts in each direction
  5. Place face down on the pan and brush the tops with olive oil
  6. Bake in the oven for 35-40 minutes or until the bottom of the potatoes are nicely golden and crispy
  7. Remove from the oven and let cool until the pan stops sizzling
  8. Serve and enjoy!

What kind of potato should I use?

There are multiple kinds of potatoes that you can use and that will work in this recipe. I recommend using any type of Baby Potatoes or Small/Medium Yukon Gold Potatoes as that is what I have used to test and perfect this recipe!

NOTE: The size of potato you use may affect the baking time of the recipe.

What does it mean to score potatoes?

To score potatoes, you will cut them all in half. Take a sharp knife the make 2-3 cuts each way about 1/2 cm deep (or less). This helps to create crispy edges and cooking all the way through to make a soft center.

How do I know the potatoes are done baking and crispy enough?

You will know the potatoes are done when you flip one over and it is golden. It will have a crisp crust on the bottom as well.

A fork should easy be able to get through the potato if it is cooked fully.

How can I store leftovers?

Store in an airtight container for up to 3 days in the refridgerator.

What’s the best way to reheat these potatoes when leftover?

You can reheat in the microwave, however, it won’t make them crispy again. To get that crispy texture, reheat in the oven at 400 degrees F for 10-15 minutes or until warm and reaches the desired crispiness.

Parmesan Crusted Potato with Onion Powder Recipe

  • 2 lb gold potatoes or baby potatoes, halved and scored
  • 1/2 cup olive oil
  • 1/3 cup grated parmesan
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic powder
  • sea salt, to taste

Instructions
 

  •  Preheat the oven to 425 degrees F
  • Mix the olive oil, grated cheese and seasonings together in a bowl
  • Coat the bottom of a baking tray with the olive oil mixture
  • Cut the potatoes in half and score the bottoms of each with 2-4 cuts in each direction depending on the size of the potato (see FAQ section for scoring instructions)
  • Place face down on the pan and brush the top of the potatoes with olive oil
  • Bake in the oven for 35-45 minutes or until the bottom of the potatoes are nicely golden and crisp
  • Remove from the oven and let cool until the pan stops sizzling. I typically let them cool for 5-10 minutes
  • Serve and enjoy!
