Baked Chicken Feta Pasta with Shallots and Tomatoes

Baked chicken feta pasta with shallots and tomatoes is a delicious and easy meal to make. It's full of flavor and a unique pasta recipe to add to your dinner rotation.

Ingredients
 

  • 8 oz pasta
  • 8 oz feta cheese block
  • 1 pint grape tomatoes
  • 2 shallots, diced
  • 2 tbsp olive oil
  • 1 tbsp garlic, minced
  • 1/2 cup fresh basil
  • 1 lb chicken, cut and cooked

Instructions
 

  • Preheat the oven to 425 degrees F
  • Drizzle half of the olive oil in a baking tray (I used a 13x8 sized baking dish)
  • Add the grape tomatoes to the baking dish
  • Add in the garlic and shallots
  • Mix until combined with the olive oil
  • Place the block of feta in the middle and drizzle the rest of the olive oil on top
  • Add about half of the fresh basil onto the tomatoes
  • Put the baking dish into the oven and bake for 35 minutes
  • Start your pasta water and cook according to package instructions
  • At this same time, prep/cut your chicken and sauté in a pan with olive oil until cooked and slightly golden (if you don't have chicken cooked and on hand already)
  • Once the pasta is cooked to al dente, rinse with cold water to stop the cooking process
  • Remove the feta and tomatoes from the oven when golden and slightly charred. some of the tomatoes may have burst as well
  • Using a spatula, mix the feta and tomatoes together. Tomatoes will burst to create a creamy sauce with the warm feta cheese
  • Add in the pasta, chicken and remaining fresh basil
  • Mix until fully combined
  • Season with salt and pepper to taste
  • Enjoy!
