Baked chicken feta pasta with shallots and tomatoes is a delicious and easy meal to make. It's full of flavor and a unique pasta recipe to add to your dinner rotation.
- 8 oz pasta
- 8 oz feta cheese block
- 1 pint grape tomatoes
- 2 shallots, diced
- 2 tbsp olive oil
- 1 tbsp garlic, minced
- 1/2 cup fresh basil
- 1 lb chicken, cut and cooked
Preheat the oven to 425 degrees F
Drizzle half of the olive oil in a baking tray (I used a 13x8 sized baking dish)
Add the grape tomatoes to the baking dish
Add in the garlic and shallots
Mix until combined with the olive oil
Place the block of feta in the middle and drizzle the rest of the olive oil on top
Add about half of the fresh basil onto the tomatoes
Put the baking dish into the oven and bake for 35 minutes
Start your pasta water and cook according to package instructions
At this same time, prep/cut your chicken and sauté in a pan with olive oil until cooked and slightly golden (if you don't have chicken cooked and on hand already)
Once the pasta is cooked to al dente, rinse with cold water to stop the cooking process
Remove the feta and tomatoes from the oven when golden and slightly charred. some of the tomatoes may have burst as well
Using a spatula, mix the feta and tomatoes together. Tomatoes will burst to create a creamy sauce with the warm feta cheese
Add in the pasta, chicken and remaining fresh basil
Mix until fully combined
Season with salt and pepper to taste
