High Protein Mini Egg Bites are an easy, healthy and high-protein breakfast that you can make on the weekend and have throughout the week. They're only 50 calories each!
- 4 eggs
- 3/4 cup liquid egg whites
- 1/2 cup red pepper, diced
- 1/2 cup kale, shredded finely
- 1/2 cup goat cheese, crumbled
- salt, to taste
- pepper, to taste
Preheat the oven to 350 degrees F
Grab a large mixing bowl and crack your 4 eggs into the bowl
Whisk until blended and then add in the liquid egg whites
Add the diced red pepper, shredded kale and crumbled goat cheese to the bowl
Mix until fully combined and add salt and pepper to taste
Grease your muffin pan with nonstick spray of your choice
Add 1/4 cup of the egg bite mixture into each muffin tin, the recipe should make 10-12 muffins which is enough to have 2 for each day of the work week.
Bake for 15 minutes
Let cool slightly and enjoy!
