  • Plain Cream Cheese – This should be in the block form and softened to room temperature for easy mixing.
  • Vanilla Extract – Adds great depth of flavor to the cookies. However, you could also use vanilla paste if that’s what you have on hand. And if you don’t have either, omit it completely, the cookies will still be delicious!

Ingredients
 

  • 15.25 oz Chocolate Cake Mix
  • 8 oz Plain Cream Cheese, softened to room temperature
  • 1/2 cup Salted Butter, softened to room temperature
  • 2 tsp Vanilla Extract
  • 1 large Egg, at room temperature
  • 2-3 tbsp Powdered Sugar, optional, for dusting on top

Equipment

  • Electric Stand Mixer or an Electric Hand Mixer
  • Cookie Scoop 1.5 to 2 tbsp
  • baking sheet

Instructions
 

  • To a stand mixer or large mixing bowl, add the softened cream cheese, softened salted butter, vanilla extract and egg
  • Mix until smooth and creamy. Use an electric hand mixer if not using a stand mixer
  • Add in the entire package of chocolate cake mix
  • Mix again until incorporated. Scrape the sides as needed
  • Use a 1.5 or 2 tbsp scoop to portion the dough on a cookie sheet that is lined with parchment paper
  • I bake about 6-8 cookies at a time depending on the size of my baking sheet
  • Bake at 350 degrees F for 8-11 minutes
  • When removed from the oven, the center will still be very soft while the edges have slightly more structure to them
  • Let cool for about 20 minutes
  • Top with a dusting of powdered sugar and enjoy!
