Chewy Chickpea Blondies Recipe
Ingredients
- 15 oz Canned Chickpeas, rinsed and drained
- 1/2 cup Almond Flour
- 1/3 cup Natural Creamy Peanut Butter, or Creamy Almond Butter
- 1/2 cup Maple Syrup
- 2 tsp Vanilla
- 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/3 cup Dark Chocolate Chips, plus extra for topping
- Sea Salt Flakes, optional, for topping
Instructions
- Preheat your oven to 350 degrees F and line a loaf pan with parchment paper and/or spray with nonstick as needed
- Add all of the ingredients, except for the chocolate chips and sea salt flakes, to a food processor
- Blend until smooth and creamy, scraping the sides as needed
- Transfer the batter to a bowl and fold in the chocolate chips
- Spread the blondie batter into the loaf pan and top with more chocolate chips
- Bake for 30-35 minutes, or until a toothpick comes out clean/with a few crumbs
- Top with sea salt flakes (optional)
- Let cool for 30-60 minutes
- Slice and enjoy!
