S’mores Brownie Bites Recipe
These S’mores Brownie Bites are the perfect sweet treat. They are easy to make AND delicious. The buttery graham cracker crust pairs perfectly with the rich, fudgy brownie and toasted marshmallow.
These S’mores Brownie Bites have to be one of my favorite recipes I’ve ever made.
It combines two of my favorite things, brownies and s’mores!
However, what also makes this recipe so amazing is that they are easy to make without sacrificing in quality or flavor.
The fudge brownie perfectly contrasts the buttery graham cracker curst.
And the fluffy marshmallow brings it all together holding that rich piece of chocolate on top!
It truly is the perfect bite.

If you’re like me, you’re always looking for ways to make things a little bit easier in the kitchen. If you’re short on time, here are a few things you can do with this recipe.
- Use pre-crushed graham cracker crumbs. Don’t waste any time smashing graham crackers or pulsing in a food processor. (Let’s not forget about the clean up time this leaves you with!)
- Buy brownie mix from the grocery store. There is no shame in buying your favorite brownie mix every once in a while. Plus, this recipe is one of the best times to utilize it! It’s easy AND delicious.
- Make these S’mores Brownie Bites ahead of time! You can make this recipe the night before serving and they will still be delicious. Just store in an airtight container at room temperature.
However, if you’re sticking to the recipe as I share below, here are some of my tips for making the BEST S’mores Brownie Bites.
- Whisk your eggs before adding to the brownie batter. It helps to create that iconic shiny and crinkly brownie crust on top.
- Don’t over-bake the brownies. Simply because no one likes a dry brownie!
- Keep an eye on the marshmallows when broiling! It only takes a few seconds to go from perfectly toasted to burnt.
How to Make S’mores Brownie Bites
- Preheat the oven to 350 degrees F
- First, we will make the Graham Cracker Crust
- Add graham cracker mixture into each muffin holder of a greased mini muffin tin
- Now, it’s time to make the brownie batter
- Add the melted butter, oil and sugar into a large mixing bowl
- Whisk the 2 eggs together in a small bowl before adding into the batter
- Also, add the vanilla extract and coffee
- Fold in the flour and cocoa powder until just combined
- Add the chocolate chips
- Bake for 20-23 minutes
- Let the bites cool
- Remove each brownie bite from the muffin tin
- Transfer to a baking sheet lined with parchment paper
- Add a large marshmallow on top of each brownie bite
- Turn the oven to Broil on High
- Toast the marshmallows for 1-3 minutes or until perfectly golden
- Press a piece of chocolate on top of each marshmallow
- Lastly, let the bites cool
- Enjoy!
Frequently Asked Questions
You can! Just make sure it’s a piece small enough that fits on the brownie bite and still shows some of the toasted marshmallow.
It can be! Use gluten free graham crackers and gluten free flour to make this recipe gluten free.
You could! However, it will increase the baking time. You will want to keep an eye on the baking as I haven’t tested this out myself.
I stick a toothpick in the center of the brownie. If it comes out dry with a few crumbs, it’s done baking!
Store in an airtight container at room temperature for up to 3 days or in the fridge for 5 days. I suggest warming in the microwave for about 15 seconds prior to eating if you store in the fridge.

Ingredients
Graham Cracker Crust
- 6 sheets graham crackers
- 3 tbsp salted butter, melted
- 1 tbsp granulated sugar
Brownie Batter
- 1/2 cup salted butter, melted and hot
- 1 tbsp coconut oil or olive oil
- 1 1/8 cup granulated sugar
- 2 large eggs, room temperature
- 1/2 tbsp vanilla extract
- 3 tbsp liquid coffee
- 1/2 cup all purpose flour
- 1/2 cup cocoa powder , unsweetened
- 1/2 cup semi-sweet chocolate chips
Marshmallow Topping
- 24 large marshmallows
- 2 Hershey chocolate bars, broken into 24 pieces
Instructions
- Preheat the oven to 350 degrees F
- First, we will make the Graham Cracker Crust!
- In a mixing bowl, combine the crushed graham cracker, melted butter and granulated sugar
- Mix until fully combined
- Add about 1 tbsp of graham cracker mixture into each muffin holder of a greased mini muffin tin
- Press the graham cracker until packed into each mini muffin mold and is in a flat, even layer
- Now it's time to make the brownie batter!
- Add the melted butter, oil and sugar into a large mixing bowl
- Mix together until fully combined
- Whisk the 2 eggs together in a small bowl before adding into the batter
- Once you add the eggs to the batter, also add the vanilla extract and coffee
- Mix until combined
- Add in the flour and cocoa powder
- Fold until JUST combined (You don't want to over mix the batter)
- Gently fold in the chocolate chips
- Bake for 20-23 minutes or until a toothpick comes out of the brownie center clean
- Remove the mini muffin pan from the oven
- Let cool for about 15 minutes then remove each brownie bite from the muffin tin
- Line a baking sheet with parchment paper and place all the S'mores Brownie Bites on the tray about 1 inch apart
- Add a large marshmallow on top of each brownie bite
- Turn the oven to Broil on High
- Put the tray in the oven and toast the marshmallows for 1-3 minutes or until perfectly golden
- Remove from the oven and immediately press a piece of a Hershey Chocolate Bar on top of each marshmallow
- Let the bites cool
